Achievements unfortunately won't unlock at the time you got them, no. They'll usually pop when you start the game again later, in online mode.
It will save though.

Some games grant achievements while in offline mode but they will all have the same timestamp when you reconnect to steam. Sometimes this may look like you cheated them if thats something you worry about.

For 1 year I have played in offline mode (because I was on limited 1 GB per month net and had a weird phobia that running steam in online mode will eat all my net balance) and I can confirm that hours are not counted while if offline mode.
