Razer Carcharias for Xbox 360 and PC, it is pretty awesome when using it with Razer Surround Pro.

Only thing I don't like about it is that the microphone is too loud, it picks up a lot of what I hear (this is also because the headset is open-designed, a lot of sound leaks from the inside to the environment).

When it comes to audio quality and fidelity when using virtual 7.1, this is easiest the best one I've tried so far. And it is really comfy. I'd totally recommend it.

I use Philips SHP2000 (and I like its deep bass) and laptop integrated mic. Perfectly fits to talk to friends in Skype and hear footsteps in CS. Cheap but enough.

Razer Electra, I know that's not a PC headset, but i payd 40$ for it and 0.20cnt for the jack adapter. Really confortable.

Cons.: No 5.1, you need to buy other adapter to use headset mic.

Logitech earbuds. My last headphones were cheap Sony ones and they broke so I'm trying to stay away from headgear until I get better speakers (my earbuds are plugged into my PC, not the speakers).

If you're going to buy a headset, don't get Logiturd. Their products look flashy, but they're utter crap. Poorly designed, cheaply made and overall terrible quality.

I'm currently using a Corsair Vengeance 2100. Don't mind the "gaming headset" nonsense every company labels their headsets though. The 2100's are pretty good. The 7.1 Channel works well with majority of FPS/TPS games(although Metro: Last Light seems to have some inconsistencies in sound directions). The mic is decent quality. There are also options for 5.1 and 2.0 channel sources. My main issues with the headset are; It crackles and pops when I go into the kitchen(the only place in the apartment it does that), and it uses micro usb to usb for charging. I hate micro usb because they wear over time and become unusable.

The Corsair Headset Control Panel has an equalizer, so you can mess with that a bit, as well as presets for the equalizer. Some of those presets might suit you just fine, too. I have noticed the Control Panel resets my equalizer profiles back to the default ones for reasons/causes unknown to me.

Honestly, I prefer headsets because they're convenient and cheaper than audiophile headphones and a mic. I'm content with quality headsets.

Honestly, I was looking at the 2100 but it seems entirely too similar to the Logitech G930. Looked 'em both up online and some even said that the Logitech's build quality is a bit better. Although, having owned the G930s, I can easily say that its wireless is...buggy - likely has nothing on 2100's.
