I'm assuming single player is what you're looking for -
Baldur's Gate series
Fallout series
Elder Scrolls series
Final Fantasy 6 and 7 (I'm sure there's other good ones but these I can vouch for)
Witcher Series
Mass Effect Trilogy
Chrono Trigger
Kingdom Come: Deliverance
Dragon Age trilogy
Knights of the Old Republic / KoToR 2 with added cut content mod

+1 for Fallout and Elder Scrolls series, except for their latest, "online" versions (also +1 for The Witcher 3, but not The Witcher 2)

old or new is welcome
DRAGON QUEST XI: Echoes of an Elusive Age - New but with nostalgia and an old turn based style 😎

These are pretty good lists:

https://www.pcgamer.com/best-rpgs-of-all-time/
I think I'd want to add Assassin's Creed Odyseey to those. Not a traditional RPG, but close enough to deserve a mention.

My favs narrative-wise:
Disco Elysium (the only real competition to Planescape)
Planescape: Torment
Vampire: The Masquerade
Torment: Tides of Numenera (it has its flaws, but not in the writing department)
The Banner Saga trilogy
Dragon Age: Origins
The Witcher 2-3
Tyranny
Pillars of Eternity (didn't enjoy the sequel that much though)
Vampyr

all the major one have been mentioned. But hey, why not again?
LEGENDS OF GRIMROCK
Underrail not to be mistaken for undertale, which is also pretty good
Baldur's Gate 1 and 2 + expansion, with trilogy mod (combines all three into one game)
Vampire the Masquerade
Planescape Torment
Torment Tides of Numenura
Dragon Age Origin
Tyranny probably the weakest game on this list, but the only one where you can be truly evil
Star Wars Knights of the Old Republic 1 and 2
Mass Effect the first game is a good RPG, the later ones move more into shooter territory
Pillars of Eternity
Wizardry 6, 7, 8 6 is kinda meh, but they make a good trilogy; all three games are definitely showing their age, but if you can get past that 7&8 combined are phenomenal
Divinity Original Sin 1 and 2 especially if you can play multiplayer

JRPG's I would recommend - Persona 4, Ys VIII: Lacrimosa of Dana and Ni No Kuni

I'll second a lot of what others have recommended :)
Adding this though - a very underrated RPG that I believe still holds up til this day.
Kingdoms of Amalur: Reckoning
P/S: The remaster is coming this September :)
Edit
Adding these - some of my childhood favorites besides the usual triple A stuff :)

and if you're into dungeon-crawling aRPGs

I'm still undecided about recommending the third installment of the series since it seems like a huge buggy mess

Here to support this recommendation, specially considering the underrated side of it.
Enjoyed very much playing this game, so much that I even decided to review it (and i'm not very much into reviewing games). I'll share it here, if I may: https://steamcommunity.com/id/RainbowWarrior/recommended/102500/
Also, recommend The Witcher. Only played the first one (have the next two on my backlog), but it has great story, characters and setting.
Finally, the Mass Effect series. The first trilogy is amazing.

I'm about to dive into Pathfinder Kingmaker, which is rather similar to Baldurs Gate.

I'm sure you've already picked something, with all the suggestions presented, but I can't recommend enough giving CrossCode a look. ^_^
(Also Hyperdimension Neptunia if you're ok with JRPGs too. :D )
