Does anyone know of a game similar to Legend of Grimrock, but with more customization and rpg elements?

If you are willing to play a series of games that are over a decade old then yes. Might and Magic 6-8 are the same with alot more freedom when it comes to....well everything. That or you could play wizardry but those were never my kinda games so i am a bit biased there. :P

Why only 6-8? World of Xeen (4 plus 5) is the best one.

6 was the changeover from grid to freeform world. I did like it also.

6-8 were the first ones I played. Not to mention the lack on non turn based combat wasn't my thing, felt like pretty much all the other first person party based games I've seen from that time.

The older ones? hmmm maybe my memory is a bit fuzzy but im sure they at the very least felt turn based. I mainly mean the whole running around and dodging shit that was something i remember doing alot of. Also the immunity to every ranged attack outdoors once you got the fly spell :O

LOL, I remember that. The games did not prevent you from flying up and down in turn based mode, so you could dodge ranged attacks so easily.

Man, I had so much fun with 6. Flying around in the end game, firing off meteor showers (and pew pew lasers) into swarms of titans and dragons.

Unfortunately the Age of First Person Dungeon Crawlers is long over. You'll have to look in the 80's and 90's to find most of the similar games. Eye of the Beholder, for example, is a classic in this genre. For more recent entries, you could try Etrian Odyssey or The Dark Spire on the DS.
