Nisemonogatari (watch bakemonogatari first, if you haven't already).
The best "weird" anime that I have watched in a while. same goes for its prequel. Currently ongoing, new episodes every weekend.

The lure of this was simply too great to remain a lurker. I've watched a lot of stuff in the past, and recently began watching stuff a bit more frequently. May edit stuff in as I remember series.
-Code Geass
Death Note and Gundam got together and had a bastard lovechild. And it was a beautiful lovechild.
-Kara no Kyoukai
Some of the things in this series of movies may not make complete sense at first, especially if you watch them in their normal order, and even more so if you're not used to Nasu's works. That little detail aside, Garden of Sinners is beautiful eye candy, has a nice soundtrack, and has a few awesome battles. If you're a fan of Kinoko Nasu, then this is a must watch.
-Mirai Nikki
I'll be the first to comment that I'm not extremely confident in studios adapting manga or VN to anime, but the studio taking care of Mirai Nikki is doing a great job. Currently, it's still on-going, but there'll only be another three to five episodes before it finishes. Alternatively, go read the manga, which is complete.
-Persona 4: The Animation
While this is more for fans of the games, I have noted that the animation drew people to the games, so it's worth mentioning. This is an adaptation of the Persona 4 PS2 game, which is a social simulator + dungeon crawler RPG, and a part of a sub-series in the Shin Megami Tensei megaverse. I recommend most of SMT for games, and the animation is fairly well done; may or may not be your cup of tea, however.
-Fate/Stay Night
I'm only listing this because I like the general matter. If you're all right with VNs (visual novels), then avoid the anime like a rat with the plague and go look into acquiring the VN and set your computer in Japanese unicode, blah-blah-blah, and go install it. That said, the anime is all right. The VN is a million times better, though.
-Unlimited Blade Works
This is related to FSN. Based on the VN's second route, the movie is animated by the same group that did Kara no Kyoukai. It's beautiful, very faithful to the source-route, and is just a generally good movie to watch. A plus point is that it functions as a standalone title, so you can enter, watch, and leave without investing too much time into it.
-Fate/Zero
Only if you've read the Fate/Stay Night visual novel, as a lot of the information would go over your head/spoil FSN for you. This is a prequel that covers the Holy Grail War that took place ten years before the events in FSN. Another case of supreme eye-candy. Also, if you prefer literary treats over animation, this is an adaptation of the light novel series, which I do believe has been fully translated. Season one of F/Z is complete; season two is slated to start later this year.
-Working!!
Based on a 4-koma manga strip, this anime focuses on a small family restaurant and the shenanigans that go on inside. It has two seasons, and, frankly, I enjoyed both. They lack a major plot or much action, but they're a roller coaster for humor.
-Higurashi/Umineko no Naku Koro ni
Like Fate/Stay Night, if you're into visual novels, avoid both of these and go read their respective novels (as a small note, both novels here, unlike FSN's, are all-ages!), otherwise, both of these focus on a degree of mystery, while offering extreme amounts of blood and gore. Higurashi takes place in a village in which gruesome murders occur as the defecation impacts the rotating oscillator. Umineko is a similar experience, but on a small island with eighteen people, consisting of a wealthy family and their servants. And a witch.
-CLANNAD/CLANNAD: After Story
Slice-of-life, kind of. Somehow, KEY managed to make an anime based on its similarly-named visual novel, and they made it bloody good. It can be a bit of tear-jerker later on, but the overall premise is good, and you'll find yourself laughing or feeling warm inside every other episode.
-Mahou Shoujo Madoka Magica
Nietzsche traveled into a parallel universe, had love-children with a magical girl, and said lovechild became Urobuchi Gen. Gen went on to write the premise of Madoka, which is essentially magical girl anime meets philosophy overdrive. Very nice watch.
-Mahou Shoujo Lyrical Nanoha (and the subsequent seasons)
For a more light-hearted magical girl anime, Nanoha can mend your heart after Madoka ripped it out and shredded it. First season is kinda fluffy, but seasons two and three include explosions left and right and a few mini-memes that circulate in closed groups. Someone adequately coined it as a magical girl series for all ages and genders- partially thanks to the explosions.
-Minami-ke
I wasn't that fond of season two, and, while season three was better than two, it couldn't quite live up to season one. That said, season one is a very light-hearted slice-of-life story revolving around the Minami sisters, who live together. Haruka is the reliable older sister, Kana is the energetic and generally stupid middle sister, and Chiaki is the intelligent and snarky youngest sister. I recommend it for humor.
-School Days
Wonderful yandere. That is all. Also, a protagonist who's a bastard and does get what's coming to him!
-.hack
.hack has several animated series and seven main-plot games (I don't count the PSP game as canon). That said, it takes a lot of dedication to get the entire plot. Is it worth it? To me, it was. .hack takes place in an MMORPG known as The World. What actually goes on varies depending on which series/game we're talking about, though.
-Yuru Yuri
If you're all right with/like shoujo-ai, then Yuru Yuri is a light-hearted slice-of-life/comedy that has some slight shoujo-ai undertones. I watched this recently. It's fairly cute, and almost every episode has something ridiculous or funny to keep you interested.
Now, I mentioned them above, but I'll go ahead and talk a bit more about them here, if you're interested. Visual novels are the midway-point between a light novel and anime. There's a lot of reading- usually more than your average book- a soundtrack, visuals, and, depending on the novel, voiceovers. Unfortunately, there's also a slight drawback. A number of them have H-content (hentai/18+ content). That said, prospective readers should avoid 18+ titles, but they'll go for them anyway, I'm sure. Below, I'll list the all-ages and 18+ titles worth mentioning.
-All-ages-
-Higurashi no Naku Koro ni
I've yet to read them through, but they're by Ryukishi07, who later did Umineko. That said, there's going to be plenty of gore, but it is effectively all-ages. There's five different visual novels; one has four "chapters" in it, and I believe the other four are standalone-chapters per game. Can't remember right off the bat. All are translated to English, and, I believe, can be run without switching unicode.
-Umineko no Naku Koro ni
Eight episodes, probably sixty to eighty hours' worth of reading, several mind-screws, a number of mysteries, and maaaaagiiiiic. I, like almost everybody I've forced to read this, have enjoyed Umineko immensely. The first day of episode one is agonizingly slow, but, after that, it's a roller coaster of emotions and experiences. God-tier soundtrack with well over one hundred tracks, each used to further set the mood in just about every scene. All eight episodes are now released and translated. However, these require your computer to be switched over to Japanese non-unicode settings.
-CLANNAD
Same slice-of-life mentioned in the anime segment, but more options for who heroines, since it's not a one-way trip. I've actually yet to read it for a number of reasons, but the main title is all-ages, fully translated, and, if you find the right files, voiced. Like Umineko, it requires Japanese non-unicode settings.
-Little Busters!
Another KEY title, and one I read through completely. The stand-alone story is all-ages. If you know how KEY works, you know what to expect: Light-hearted and happy humor in the beginning, then some clusterscrew of emotions in every other heroine's route. A great experience, though. Translated, and requires Japanese non-unicode settings.
-18+-
-Fate/Stay Night
Because it demanded being said after the mentioning of the anime. Fate has three routes. The first is the foot-in-the-door route, the second is (in my opinion) the most amazing and also what the Unlimited Blade Works movie was based on, and the third is pretty good. Depending on your speed of reading and completion-urges, anywhere from thirty to fifty hours long, lots of bad-ends, and a nice soundtrack.
-Tsukihime
For completion's sake, Tsukihime was the first TYPE-MOON VN. Five routes, blood, death, bad-ends, etc. It, like FSN, is 18+, translated, and requires Japanese non-unicode settings.
-Katawa Shoujo
Legally free, and easy to acquire! Katawa Shoujo, or Disability Girls, revolves around a protagonist with a heart condition and his arrival and life at a school for others with various disabilities. Don't let the premise scare you away: The writing is great and believable, and the writers were very respectful towards the subject matter. Soundtrack is okay. It's free, and can be gotten for 4LS's site. It's in English by default and does not require any special configuration to run. Also, the H-content can be disabled in the menu, so that's a definite plus for people who'd rather not encounter bad things.
-Kara no Shoujo
A gritty story involving a serial killer and investigators. Era it's set in, if I recall, is the 50's. A bit more interactive than the average visual novel, since it requires the reader to investigate a few scenes, but overall a great read. Soundtrack is pretty nice. Fully translated, unsure of whether or not it requires Japanese non-unicode settings to run.
Too lazy to go into further detail or list more. Google is your friend if any of those interest you. There's also plenty I probably forgot, or intentionally left out because others mentioned them a few times.

WOOHOO! NANOHA! +1 recommend, especially StrikerS.
Also, I wouldn't necessarily recommend .hack//SIGN. It was rather slower-paced than I expected. Well, I guess the right approach is to know beforehand that it's a mystery, more of a psychological story than an action-oriented series of any sort. It's also very richly atmospheric.
I haven't seen any of the other .hack// series.

there's going to be plenty of gore
THE VERY NEXT FUCKING SENTENCE

Nadesico, Wolf's Rain, Black Blood Brothers, Darker than Black. All of those are completed. But, my favorite animes so far are Naruto/Shippuden which you're watching and then there's Ghost in the Shell. Ghost in the Shell is a movie, as is Ghost in the Shell 2: Innocence. Then there's a series, Stand Alone Complex and Stand Alone Complex 2nd Gig, then another movie Solid State Society.

Eureka Seven - one of the best love stories ever. You will cry both tears of sadness and tears of joy. Your heartstrings will be not just tugged dragged to the ends of the earth. You will experience the gloriousness of the power of love firsthand--emphasis on BOTH "power" AND "love". Very character-centric, this series chronicles the character development of several key main characters as the wheels of fate and circumstance turn around them, how a motley crew of mercenaries become the ones to save the world, and how an initially immature boy grows up through his experiences. (50 episodes)
Rocket Girls - Is it just Yukari, or is everyone else on this island really completely nuts? In this lightly humorous story based on a series of light novels, a high school girl becomes an astronaut. Drama and comedy both ensue, and the series strikes a good balance of both. Besides, where else will you find a joke involving reverse Polish notation? (12 episodes)
The iDOLM@STER - Twelve girls aspire to be teen pop idols. This is their story. That said, for a series based on a game where you play their manager, this series turned out far better than it sounds. With a large and varied cast of characters, the series mixes in light and heavy drama with bits of humor to produce character development quite well. Surprisingly, this series also contains practically no fanservice, despite what you might expect of its content. However, it WILL summon waterworks from your eyes, at multiple points, as it documents the trials and tribulations of a set of characters you will grow to know and adore. (25 episodes)
