Yes its a big industry just be ready for copyright claims because they are always bound to happen.

Do you just experiment to see if your videos have a Copyright violation? Is there any clear cut way to know? Also, if you violate the terms once, how severe are the consequences?

I don't think this is the correct place for your question. You would get better answers by looking up the regulations and procedure regarding monetization on Youtube or so other community more informed about this.

I'm sorry; I just thought this would be a good place to ask because there is a large gaming community here. The guidelines are kind of vague. :X I've watched videos stating how open-ended and vague the policies were.

Copyright is hard you should be able to use footage you captured from a game for journalistic reasons but it still doesn't stop them flagging it for images and sound/music clips it detects as copyright.
If your making a review channel or lets play it shouldn't be a big issue as everything they flag should be able to be disputed and won anyway.

There is no harm uploading general gaming related videos otherwise 1/2 of youtube wouldn't exist.

Yes. Just remember:
Don't use other people's stuff unless they specifically stated it can be used for yt et al.
Don't do Nintendo stuff.

It's a little in-joke in that part(or all?) of the system is automatic and not supervised by an actual person.

It doesn't. It's something that affects monetization, because companies and MCNs can take monetization away from your videos as a response to you copyrighting etc. anything they own, but the system is so broking that it's abused constantly and not used properly.

Just watch Jim Sterling's "Deadlock" video about it, where several companies, clearly automatically, tried to monetize one of his videos in which he, on purpose, copyrighted several stuff.

I found this list which is pretty accurate, missing a few but it covers most. If a dev or publisher of a game isn't on the list just search their website for a faq.
