It is an anomaly for people to make profit?

Probably a glitch. It happens sometimes, I don't believe anyone paid 1,60€ for a sack of gems.

The whole Sack of Gems market page is buggy as hell.

I'm guessing Steam Market Server had a hiccup and didn't showed cheaper deals, some people wanted to make some quick trades for DLCs while other panicked and quickly bought some thinking price will jump even higher...

I think because ppl; start to use sacks of gems as a trade coins instead of CSGO/TF2 keys

Just some market glitch. I would have sold 50 bags each time the price doubled in an instant.

And now gems have the 7 day trade ban upon purchase. Fucking hell they are cracking down.
