X-Men: Children of the Atom -- check out Silver Samurai's stage music
Parappa the Rapper -- still sold as a PSP (or Vita?) game today. A rhythm game that was the progenitor to today's Guitar hero etc...
Urban Chaos -- an open world game...created in the late '90s!
Tenchu: Stealth Assassins -- Depicts stealth games in a manner not achieved previously, immersive and dark "sneak" game set in feudal Japan.

Atlantis: The Lost Empire is surprisingly awesome for a licensed game. I'd say try Aladin In Nasira's Revenge too, but it has an impossible part that they could only fix in the PC version - by allowing you to skip it, so you should probably pass on that. Too bad, it's a great game otherwise.
Other than that, I just bought myself T'ai Fu: Wrath Of The Tiger and Fade To Black in the previous couple of months, among others. Haven't tried any of them yet, but they did look rather interesting, and their fans love both of them from what I can tell.
Oh, and Tom & Jerry In: House Trap is freaking sweet, also has local multiplayer. Probably the only Tom & Jerry game that actually feels like its source material.

Digimon World 1. Not the second or the third or any other digimon world that comes after 1. It's the most unique game I've ever played. It was given a bad review because people couldn't figure out how to evolve their digimon to other than Numemon.
