why cant I create a GA for the trilogy?

There is a "add game to list" option in the support tab, you could try that if you want.

But I'm assuming that its a new package on steam, can't really check atm, but I'm sure it'll be added soon if it is.

Hmm, as far as I know, a trilogy pack / bundle doesn't exist on Steam.

I think no, because the bundle has 3 games and only one was free.
