First of all according to Steamgifts rules the winner has 7 days to redeem their gift. Messaging them the next day after your giveaway has ended already is quite pushy. You really shouldn't do that.
Also, they are not obligated to answer you. What they need to do is redeem their gift and give feedback accordingly. Your giveaway description also says nothing about adding them on Steam - you can't expect them to do it if they know nothing about it from the description and again the comment you leave on their giveaway.
As the giveaway creator you should use your giveaway description to tell the winner if a gift is going to be delivered on Steam directly.
