I think one of these 2 two things are going on.. they will move their bundle release time to what they did with the last bundle which I think was either 9PM PST or 12AM PST(can't remember which it was) or they aren't releasing a bundle till after the Steam Winter Sale is over. They didn't release one during the big sale that just past and there's a good chance this could be the case now.

Yeah, I can easily see this being the case. When it's the week of a known Steam sale they usually skip it because they know they are going to be doing some mega-price matching in the store.

TBH I never understood why they would do launch bundles during the big sales. It just made more sense to me to wait till it was over, like they did the last big sale. If it happens again I'd expect this to be the new norm.

I wouldn't hold my breath for any new PC game bundles until the Winter sale is over (Jan, 4 ? or does Humble's last longer?)
Humble has had a store for years, and bundles have routinely gone on vacation during sales, well before the acquisition; you don't want people to hold off from buying during the sale because they're expecting or afraid of bundles, so you don't do them, simple as that.
My humble guess (pun not intended!) is the next PC game bundle will be the January Monthly unlocking on Jan, 5, expecting the PC game bundle cycle to resume not before that date. OTOH, keep in mind people sometimes get pissed and/or ask for refunds, if they notice their new acquisitions are being bundled soon after the sale - so there is an argument in favor of playing it as safe as possible, though that alone isn't enough to stop this dynamic entirely.
For anybody buying on Steam, my suggestion would be to concentrate the purchases in the last days of the sale, to make the most out of the two weeks long refund window.

Forget about next week, that's Humble Monthly reveal week. So no bundle either (or only a very bad one). Then the week after next week, they need to make sure everyone buys the new Monthly. So we all could go on 3 weeks voyage and wouldn't miss a thing.

If I were a dev I wouldn't put my game into a bundle during Steam sale. I'd rather hope for more profitable income than from a bundle. Especially now that you can return the game you bought on Steam. I wouldn't be surprised (or disappointed) if there wouldn't be a bundle today then.

Could be a bundle with trashy indie games than no one (well, except for 20 collectors) will buy on Steam. Devs of those games will get a small amount of money with Humble, that's better than almost nothing with Steam.
I don't expect AAA games for sure.
Edit : Last year they released Humble Assassin's Creed Bundle January the 3rd. That was for UPlay though.
And in 2016, there were a Pinball Bundle and Humble Square Enix Bundle 3 (at the beginning of the Steam Sale). That was very surprising. But at that time, there was no refund.
