I loved Pizza Colosseum. It's technically a chain, with two locations in Prague and one in Brno, but it's damn tasty and cheap. I enjoyed their pizzas and their smoked salmon ravioli.
The castle is worth walking out to just for the trip along cobblestone streets - it feels like you're walking into history.
The market streets are pretty interesting to walk through. Just remember to haggle if you're actually looking to buy anything.
The beer is great. Every bar servers a different beer, available in both light (pilsner) and dark (black lager) variety, so you can make a fun bar crawl to sample different beer. Staropramen, the beer brewed locally in Prague, was one of my favorites, particularly in the dark variety.
Unfortunately, I can't remember the name of my favorite restaurant in Prague. I just remember that it was in a cellar, and specialized in traditional Czech food and wild game, and the sign was hard to notice because it prominently said that it was a wine bar in big letters while the restaurant name was in much smaller letters underneath. None of the people spoke English except for the owner, but they were incredibly nice, and the food was delicious.

Safety tips: check the currency exchange rate beforehand and don't let the first exchange kiosk you see (esp. at the airport) rip you off. ;-) And be similarly careful if you decide to take a taxi. The city has a good public transport coverage, so that might be a better option. And as in many cities full of tourists, beware of pickpockets. :-)
Other than that, most tourist spots in the center are within walking distance, and the streets themselves are a tourist attraction. The medieval astronomical clock on the Old Town Square is one of the most popular tourist sites, and every full hour, the mechanism starts a cool display of moving figures accompanied by a glockenspiel. (I believe the one at noon is a bit more elaborate than at other times.) Tourists also like to visit Charles Bridge and St. Vitus Cathedral (a part of the Prague Castle). The predictable downside: all these places are packed with tourists and people trying to sell souvenirs. :-) Other points of interest might include Václav Square, Golden Lane ("Zlatá ulička"), or Petřín Tower (you can check the view from there in this 360-gigapixel panorama: http://360gigapixels.com/petrin-prague-photo/).
Probably the most Czech meal is "vepřo-knedlo-zelo" (sometimes written in a different order) -- roast pork with dumplings (sometimes bread-dumplings, sometimes potato-dumplings, sometimes a mix) and cabbage. Can be very tasty, but also very heavy compared to other cuisines. The other typical choice is "svíčková". (Both shown here: https://en.wikipedia.org/wiki/Czech_cuisine) As a side dish to go with various meals, you can also try bramboráky/bramboráčky. And if you're not scared of ripened cheese, you can try to get your hands on some "Olomoucké syrečky" (also called "Olomoucké tvarůžky") -- either as a snack, or fried ("smažené ...") as a main course.
And the most Czech drink is naturally beer, the most reliable choice being some 12° lager. :-) Goes very well with most classical Czech meals, and one pint shouldn't get you tipsy. If you want non-alcoholic drinks, you can try Kofola, a Czech fizzy drink similar to Coca-Cola, but a bit less sweet.

Winnie, if you have any means of travel outside of the city Kutna Hora's ossuary is a sight to behold - it's just a few dozen kilometres from Prague.

The city has active nightlife - maybe it's less surprising for you, coming from Italy, but for us it was so strange and lovely how many people are on the streets around night, and how many stores, kiosks and stands are open.
( IMO anything in the city centre, Prague has a wonderful old, medieval styled centre. I loved it very ,very much)
Kofola to drink is indeed great - expect what it is - something that was aimed to be the Coca Cola of the east. It's herb-based, it's taste has more depth than Coke's sweetness

Don't trust those black promoters roaming the streets at night when they claim they will show you an awesome Strip club. It's safe but the clubs (at least the one I've been to) are pretty lame.
The weed you can buy from them is good though :D
And if you're staying somewhere central in the city bring earplugs / noise canceling headphones or you won't get any sleep.
