So, I just wonder what you think about pasta.

See, I'm a big fan of pasta, especially when there is a lot of sauce, and cheese.
My personal favourite tho, is pasta with some green pesto sauce, mozarella and ducks hearts, but I'm pretty sure the best type of pasta dishes is the ones you do with passion !

I love pasta and I think anyone can have his idea of his ideal pasta dish !

I'm a simple person, I like spaghetti and bolognese sauce. But I do enjoy other combinations of pasta as well.

Pasta is great, but haven't had it with meatballs afaik.
Genovese pesto is awesome! Also simple passata + garlic sauce can be heavenly ^^

One of my specialties, is home-made ricotta stuffed with self-made ricotta under a spinach/mascarpone sauce. I rarely make it, because it's a lot of work and takes up the better part of a day.

Ideally I start the day before and make fresh mascarpone. Then, in the morning, I harvest home-grown basil and turn most of it into pesto. Then I make mozzarrella, and turn it into a caprese salad, before using the leftover whey to make ricotta. When the ricotta is straining, I start making pasta leaves from scratch, and then place add the strained ricotta to turn it into ravioli. Time to start boiling water to cook the ravioli, and (separately) the spinach. when the spinach is done cooking, I add the mascarpone and pesto, together with some dulce gorgonzola, to form a creamy-tangy sauce, which I pour over the ravioli.

Ideally, the only bits that are not homegrown/homemade are salt, milk, spinach, pine nuts, garlic, and gorgonzola, I don't put balsamic on my caprese though from time to time I might cheat and use store-bought mascarpone

um, yeah, the cheese-making ingredients like rennet and citric acid are also not homemade, obviously.
