Carbonara is my fav. Bolognese is great too. But really pasta is just so good in almost any way you prepare it. Not sure about curry though, I'm too used to curry going with rice, curry flavour doesn't seep into the pasta noodles as well as rice does.

My personal favourite tho, is pasta with some green pesto sauce, mozarella and ducks hearts

I've had some excellent pasta all over but I can't get over the simple ragù and pasta my grandmother would make when I was a kid.
She was Italian so any pasta dish was a big deal with her. She would slow cook that sauce for half a day. It was all lamb necks and ox tail in a red wine and tomato sauce with a few herbs and some vinegar and sugar if the tomatoes needed balancing. Then she would shred the meat from the bones by hand (it didn't take much, it was fall apart tender) and put it back together to wait for a couple of days in the fridge. NO TOUCHING!
Then she'd cook some pasta in the sauce and serve it with a little shaved parmesan on top. Man, I'm drooling.

I never had good cooks in the family so I just did "die and retry" with food until making something edible. I remember tho, when I was a kid, I was stunned by my grandma pasta... It was just regular spaghetti in cheap instant bouillon sprinkled with parmisan, but I found it delicious for some reason, maybe because it was my special grandma pasta ;3
The pasta dish I take the most time and attention to make is, weirdly, tofu lasagna (but lasagna are long to make in general). I usually take the afternoon to prepare the meal. I use brown sugar with the tomato sauce and basil for the sauce where I slow cook the tofu... Then it's just regular lasagna, but I really love to take my time to do it cause it's so delicious and I love to introduce people to new tastes in general.
I just love to cook lasagna when I have guests !

That's not weird at all. Sauces require a lot of prep and a lot of time to come together. And tofu really need the extra time to imbibe the flavors.

Pasta is great, my second most eaten food right after rice. There are so many great combinations and dishes, and just plain paste with bit of butter is good all by itself! It's hard to pick a definite favorite but I think I'm gonna need to go with creamy smoked salmon pasta. Absolutely delicious and the creamy texture makes it somehow feel more filling.

I'm gonna share two very brazillian inspired pasta dishes that I very much enjoy: pasta with beans (brown beans is the most traditional here), and pasta with tomato sauce and mandioca flour (or any other seasoned flour). Yum, yum. These are not traditional dishes here per se, but you'd be hard pressed to find a brazillian who doesn't eat these combinations from time to time. In fact, most packed launch services here will offer rice, beans and pasta as a standard base, with different variations of meat and vegetables. And let me tell you, pasta, rice and beans go so well all together.

I ate homemade gnocchi yesterday (my first ever) made with mandioca flour and regular flour, soaked in tomato sauce and cheese, and it was damn good !

That's amazing! Wow, thank you for sharing. It must've been delicious, I'm sure. The recipe picture is mouthwatering. But I guess I may have expressed myself badly. What I meant is pasta with mandioca flour on top of it. I understand this is a very strange concept for people outside Brazil, or at least it seems that way from what I've seen on the internet. But the picture below can help you understand it. Notice it has rice, beans, pasta and mandioca flour on the side. This isn't just plain flour, mind you. It's seasoned very well and cooked so it's very crunchy. This plate doesn't have the tomato sauce like I mentioned, instead it has rice and beans. But the version with tomato sauce is the same thing except without rice and beans.

Not sure about the duck hearts, but everything else about that pesto pasta sounds great!
Most of the pasta I make is with tomato pasta sauce as it's really easy and healthy (as far as the sauce goes). My favorite way to make it is with tiny Italian meatballs cooked in the sauce, and of course with parmesan and fresh ground black pepper sprinkled on top. I'll also sometimes add a drizzle of olive oil.
Otherwise, I love pesto sauce, I love alfredo sauce, I love carbonara sauce.
My favorite pasta dish at a local restaurant is Penne con Piselli - penne, fried pancetta cubes and peas in a pink vodka sauce. The crispy pancetta cubes are amazing, and the sauce is so creamy and rich.
The best pasta dish I've ever had was gnocchi at Piccola Venezia in New York City. These gnocchi were gigantic, way bigger than any gnocchi I've ever seen, and so incredibly light and fluffy. I brought some home to share so that my family could marvel at how amazing it was. I have no idea how they made it, but it was truly something else. And the restaurant was really cool - the menu items are more suggestions, and they'll make whatever you like. For example, the gnocchi normally come a gorgonzola sauce and I hate gorgonzola, so the waiter instead suggested pairing the gnocchi with an osso buco pasta sauce with big chunks of osso buco, and the result was amazing.

So, I just wonder what you think about pasta.
See, I'm a big fan of pasta, especially when there is a lot of sauce, and cheese.
My personal favourite tho, is pasta with some green pesto sauce, mozarella and ducks hearts, but I'm pretty sure the best type of pasta dishes is the ones you do with passion !
I love pasta and I think anyone can have his idea of his ideal pasta dish !
