From the stuff you already mentioned, Fallout is only an FPS if you play it that way, and Morrowind modded is on par with the newer Elder Scrolls games in terms of graphics.
Otherwise: Try an MMO maybe.

Total War Rome I/Medieval 2 I started playing them 5 years ago and I still play them from time to time. Both are amazing strategy games, the main difference from Civilization that the management is more war-oriented and before you'd get bored of spending a lot of time on the campaign map you can play the spectacular battles in real-time.
If you're more of an RPG-fan try Heroes of the Might and Magic V + the expansions, I sunk a sh*tload of hours in it.

Two Worlds 2 isn't bad but there are some very stupid moments in it, cheesy dialogue, awkward animations etc. If you can get it for cheap I'd say get it but don't expect it to be on par with something like Skyrim.

Just Cause 2!!!
Endless hours of mad fun and exploring.
With 400 square miles of tropical island, snowy mountain, lush jungle, and arid desert... You'll get your money's worth.
Be warned, though... It's not a game you want to play if you want story driven and objectivity.
The story and main missions are mediocre at best, and the voice acting is atrocious.

I'm pretty sure now that it's satire. Keep that in mind and VO and story are better.
Really though, it's ALL about grappling things to other things to make them explode. The wonky physics makes that even better.
Great fun, and with the MP mod I think there are build servers so if you'd rather do that than blow people up, you have options.

you should do a final fantasy anthology. start all the way from the orignals
sometimes i go back to emulators and play the games i missed on.
but if you want to play to the end of time try LoL/DotA and strategy games, they never end and every game is a new story (+1 for CiV)

Well, I'm bored to the point where I play Cookie Clicker all day... I need a game that I could waste a lot of time in, (Until Febuary 24th) Maybe there are really extreme Skyrim overhauls coming out?
Opinions on some games that have been suggested before:
The Elder Scrolls IV: There's just something about the style of the graphics that just doesn't suit me (Very cartoonish, bright and happy :D Looks like Zelda, not that it's a bad game.)
Fallout: FPS not my thing :( Maybe I'll get into it, I dunno. Or maybe I should play the "demo"... And then buy it if I liked it.
Dark Souls: Fun times man... Fun times...
Civilization/All those other strategies: Quite an option actually, I played 5 a little, the "demo". I liked it, but was hard to get into since I have never played strategy games like Civilization before, I'm mostly up for RPGs :P
Terraria/Minecraft: Pretty sure I got 4k hours on Minecraft... Those were the days... And I probly have half as much hours in Terraria.
Morrowind: An option, hopefully I won't get nightmares after the face models.
Dragon Age: Origins: Maybe I'm doing something wrong, but as much as I try, I just can't get into the game. :/
Darksiders/Darksiders 2: Thinking of replaying it actually.
Borderlands 2: Played too much than I should've over the summer, lel.
So far many of you suggested strategy games, I tried many times to get into them, but sometimes just doesn't happen. I'll probly give them another go. Civ or Total War?
I think I got enthusiasm to play Skyrim again :P Although get your suggestions flowing! Will go for Civ if I get bored.
