One little gem that is sadly not that well known as it should be because ITS SUCH A GREAT SERIES.

The Wire (best tv series ever), The sopranos, Torchwood (specially season 3), first and second season of True Detective (even if the 2nd one was rushed), Fargo season 1 and season 2.

Even if true detective and fargo are still running, every season is a different story with "similarities". In True Detective is the "dark" part of the detective's job, in Fargo is the "places" (and maybe some characters, nothing related to be honest, nothing vital or important)

Black Mirror on Netflix is really good. It's about the dark side of technology. Each episode is standalone and the seasons are short. However they really will get you thinking about things. I still think about the show because it seems so relevant with what's going on today. Season 3 (2016) was the best.

If you liked Avatar the Last Airbender give The Legend of Korra a chance. I feel it's more mature than it's predecessor (for better or worse) but it's definitely worth a shot.

The "has ended" part really limits what I can recommend but as I'm sure many others have suggested, Breaking Bad and Lost are both incredible. The Wire is also very good.

Looking at your list it seems we have similar tastes... here are some others my wife and I really enjoyed

Chuck is good (maybe don't watch season 5 though it you want the best ending)
Awake was also good, albeit only 10 episodes. The last episode is still one of my favourite hours of TV ever.
Person of interest was very consistent in keeping with its original vision and had a lot of plot threads that got interwoven as it went along
Eureka is quite fun as well, it has a case of the week format but there's also deeper threads that run through all 5 seasons that are interesting
Limitless and Forever were both one season wonders but presented nice sci-fi twists to the usual crime solving shows. (And also sadly prove that the ratings system in america is broken, both were the highest rated new shows of their seasons that got cancelled in favour of lower rated crap)

I'm sure you'll enjoy at least a few of those.

Dexter is my all time favorite show. To be honest, many people didn't like the ending, for myself I found it reasonable and understandable. It wasn't as good as the rest of the series, but also quite good. Regarding the series as a whole, I would definitely say "holy shit that was so good".

Generator Rex, Robot Boy, Jericho, Thundercats, Young Justice, Symbionic Titan, Bakugan (season 1 and 2 the best ones), And I guess thats it. Wanted to suggest underrated stuff that feature engaging, developing, continuous, concept wise and story wise lovable shows, whom all have ended. ( Young Justice is finally getting a season 3 though soon and im not sure if Bagukans truly ended.) I'm sure you've watched all the classic goodies like Megas XLR, My Name is Earl, Raising Hope, Defiance, Under the Dome and..nyeah, don't have much much memories or huge library in mind of live TV shows. Haven't been able to watch TV as I used to, plus's I don't live in America so we don't see the Flash and what not...sad that the TV days for me are over...

As some others have proposed - The Wire - if you have not seen yet, correct this error, I'm sure you will not regret it.
If you are in the mood for something lighter, try - Corner Gas. If you like the show do not forget to see the film as he puts finish in the story.
