To be fair, it's a REALLY stupid question. All you have to do is look at any user profile, literally ANY, and you'd see that people do, in fact, win things since everybody has that whole "giveaways created, giveaways won" statistic.
Plus the FAQ's staring right in your face at the top of the site at all times and you're blatantly told to read it to understand how things work around here upon creating a profile, and yet there's 2-3 basic FAQ threads PER DAY even with a search feature, since pretty much any basic site question has already been asked. It gets old, dude.

I've seen other sites which were fake, with fake accounts, having fake statistics of such things as won stuff, etc. I'm just being cautious, is that really such a big problem?

A scam is based on gaining someone's trust at first in an attempt to extort money or other valuable possessions of said someone. Is this site trying to get your money in any way? Are you at risk by using it?
Many users here see SG more as a strong community and less as a giveaway site and threads like this may get annoying easily, so don't be surprised that some may respond harshly or sarcastic.

To be fair, if you suspect a website of being a scam, why would you trust their FAQ?
Every pyramid scheme would happily tell you how legitimate and fair their business practices are on their FAQ page, and it's not hard to spoof a few accounts to give testimonials or passing conversations on "It's totally awesome, pay the joiners fee!"

The site isn't a scam. For something to be a 'scam', it has to take something from you. You aren't required to give anything or pay anything to enter giveaways, as the points you spend to enter them naturally regenerate over time.
The reason why winners are anonymous has already been answered : For security, to stop people trying to mimic the identity of the winner and phish the prize. The name is revealed after the game has been redeemed by the winner.
The reason why you haven't won yet is because thousands of people enter for each giveaway, so like any lottery or raffle, your odds of winning any individual prize is incredibly low. But given it's free to enter, and there are tons of giveaways, you are bound to win something eventually. The best way to use Steamgifts is to treat it like a part of your internet routine. If you spend a few minutes every day looking over the giveaway lists and entering a bunch, eventually you will win something. Rather than get hyped for free stuff (which will distort your perception of time and fairness), consider Steamgifts like a gaming forum with a ton of raffles attached to it.
The "contributor level' that you see is mostly irrelevant. People who make giveaways can make it available only to those who have contributed so much, but by and large most giveaways are free to everyone. Most people increase their contribution value by giving away bundle keys they don't want (or have already got copies of). If you worry this place is a scam, simply don't give anything away.

Patience is the key factor, given the odds of each giveaway. Some giveaways may only have 100 people entered, meaning your odds are higher. Others have 10,000 entries, meaning your odds are low. Such is the nature of gambling, only you don't need to spend anything to 'gamble' here. Look out for private giveaways in the forums, because the only way to enter those is usually by clicking the direct link they give in the forums, sometimes at the end of various puzzles like quizzes and jigsaws. They do this to lower the number of people who enter, both to increase the odds for those who do, and to weed out the people who don't 'really' want the game.

Of course chances of winning a game are getting higher if you give away games, because this will increase your Level.
Most people here are giving away their games to users with level 1 or higher.
You can get lvl 1 by giving away one single game and the price of the game doesn't matter.
But it can not be a game that was given away for free in the past.
If you want to get lvl 2 you have to give away games with a CV-value of $25.00.
The CV-value is not the price of the game in steam store. Well, at least not if you give away a previously bundled game.
These games will give you only 15% of the price shown in steam store.

The quickest way to cut through any bullshit is always to speak to human beings, and there's so many of us in the forums that it would be a feat of patience to have a scam-worker spoof ALL of us, their approach makes sense.
Besides, the ongoing trolling doesn't exactly project a lot of confidence in the site. A devoted scam operation wouldn't just parrot "Site is very good yes, pay entry, A++!" through ten spoof accounts, they would be more likely to mimic normal behavior. Mocking someone for questioning the legitimacy of a site could easily be seen as a little red flag in itself, especially when each taunt is a tiny reply that takes little to no effort to make (easy spoofing, etc). Hopefully the sheer volume of replies (and the few genuine replies) should make them realise by now, heh.

A devoted scam operation would also not set a barrier in the people registering like SG has. Why limit your potential victims by allowing only people with Steam accounts that have products worth $100 or more in their library to register?
Which also brings us to the second point that every account here is linked to a steam account, several of which have libraries in the thousands. Either we all conspired together( where's my tin foil cap?!) or that can serve as yet another piece fo evidence to the site's legitimacy.
I know you're not refuting this yourself but your post was the perfect place to post those points as well. So yeah, ignore it, it's for the OP :P

Nearly every scam operation doesn't have the patience to be quite so thorough, but still~
We always say that "If it sounds too good to be true, it usually is", and even here we still get plenty of people complaining about being scammed in trades over the steam system. The fact that SteamGifts actually exists is a small miracle in itself, given it requires the charity of cool people (and the spare time of moderators) to even function. When I first discovered this place my first reaction was "Nah, this has to be bullshit".

Which could work if only a completely unrelated browser add-on didn't exist. Enhanced Steam adds a direct link while browsing Steam profiles bringing you back to the one linked in SG(or the home page if that person doesn't have a profile here) while having no affiliation with the site. It's the first thing you do when you're trading to verify the person you're talking to in either SG or Steam is the one they claim to be. There's a good number of impersonators out there.
I don't expect a new user like the OP to know of that add-on though, I sure didn't till after I joined SG and started being involved in the forums.

That is true, but propably the main trigger for his concerns, the "anonymous winner", is explained in the FAQ in a quite logical and understandable way.
I agree on the talking with users for a background check, but shouldn't a glance at the forum be kinda enough? I haven't visited many obvious scam sites, but I don't really suppose that they tend to form lively communities. And creating hundreds of jigsaw puzzles doesn't really seem like the most proficient disguise. :p

Given the average age of people here, sarcasm is seemingly unavoidable. Sadly.
For better chances of winning you can do one or more of these:
1) Give away games yourself (ups your level to access more giveaways)
2) Join a giveaway group where you have to maintain a ratio of giving versus getting, but you have an awesome chance of winning.
3) Or, if you don't want to give or can't afford to, check the Discussions for listings of giveaways, puzzles, trains, hidden giveaways, random key drops, etc.

The only thing silly about asking what they did, is that if this really was a scam site, most of the replies would be from scam-staff or enablers. Mocking someone for their doubt is as much a red flag as "very good, site is good, pay entry legit A++ won BlackOps".

To be fair, as a newbie I might see that in the same light I saw that 'super-cheap auction' racket.
Can't remember the exact name of it, but they would randomly create auctions for expensive items starting at $0.01, but then charge users just to even place counter-bids. If the timer ticks down to 0:01 and no user has bidded enough, the system spoof a fresh minimum-bid to keep it going until it reaches a hidden minimum value. The site made all it's profits by simply selling the ability to counter-bid, charging them for each offer (and I think you couldn't bid over a certain increment each time), which people ate up by the boatload. The items were real and you could actually win them, but you were being deliberately bled for excess cash on a by-offer basis, and that's even assuming you weren't bidding against another human. It was damn insidious.
Not that I'm trying to scare the poor newbie away or anything, but these kinds of lists are easily faked. I actually think their caution is a good thing, even if they should have worked it out by now. \:3/
