Of what I've seen, which isn't much, I'd say Tiger & Bunny, Cromartie High School, or the .hack series. Although, my love for the latter originated from the games and the animes aren't much to talk about. I just enjoy the setting, for the most part.
Tiger & Bunny is like some softcore yaoi fanfiction fuel. I love the setting (futuristic) and characters. It's funny, but turns pretty serious and engrossing at times. I was surprised by how into I got after about 10 episodes. Anime rarely hooks me and I give up watching after the first episode or two, but this one had me marathoning until the end. Now if only we got a new season...
Cromartie High is just a big parody on anime tropes and has Freddie Mercury in it. Need I say more?

I'm pretty much the same way. If I enjoy something I want to watch it all in one go, if possible. Not have to wait every week for a new episode. Currently waiting out Doctor Who and Adventure Time to watch them all in one go (those aren't anime, of course, but it's an example.)

Welp now its going to sit in my backlog even longer. Same thing happened when I first wanted to watch the world only god knows. I finally sat down scrolled to click play (back when I was a scrub and streamed), and realized the world only god knows II episode just came out on that day. So I was like NOPE, mission abort time to wait it out another 6~ months

Ranma 1/2(the manga is even better). Why? Because it's the best comedy ever (or at least I think so :D ). Well, also it was the first one I ever watched/read, that might have contributed to it, but I am yet to find another anime/manga to make me laugh so much. ^_^

Ranma 1/2 should be my favorite comedy of all time, but I haven't finished it. It was so long in terms of the manga and my library only had 1-17 then after that just some random books. I refuse to read them out of order so I haven't finished it. I never watched the anime because I never knew where to start with the DVD's as the names never really told you where to start at. I plan on watching it sometime soon though.

Spice and Wolf is really a great series. It'd be nice if they made 3rd season.
I don't remember much from Code Geass, but I loved it few years ago. I have to rewatch it someday.
F/SN series was good, but I liked Unlimited Blade Works movie ending.
Baccano is in my top 10, I loved pretty much everything about it: opening music, characters, plot development, animation. Really great anime.
Katanagatari is in my top 10 too. I loved it.
I only watched first season of Haruhi and I liked it.

I did not enjoy Spice and Wolf. I found it dull, with mostly chatter about a subject I had no interest in; economics. I also did not find Lawrence (I think that was his name..?) that convincing as a seasoned trader, seen he made a big blunder early on and made no awesome deals to balance it out.
Oddly enough, I liked the manga more.
I liked the first season of Code Geass, the second less. The last part, the last few epi's, I think, just made me rage hard. I am okay with what happened to the protagonist, but The Black Order was just facepalm worthy and Ougi..don't let me start on suspending my disbelief.
Fate/Stay Night, good stuff. I still have to watch the other paths though.
Cardcaptor Sakura - Tsubasa Chronicle and xxxHolic.. I watch some of Sakura and read a bit of xxxHolic. I do think CLAMP is good with storytelling and art, but it just does not click with me that well. Part of it might be because I found it convoluted.

School Days is a great J-AVG. If you watched the anime, I'd say it's ok, because the anime is good but the original game is even better.
You mentioned Elfen Lied. It's one of my favorite. The blu-ray box is coming out in Japan, about $200... Ending of the anime version is a good-end, better than the manga at least...
Eden of the East is also a great anime. I watched the TV ver. and the first movie.
My favorite J-AVG is Fate / Stay night. It has a anime version, but it's a shit when you compare it with the original game. You can't miss this game!

Fate/Stay Night I have played is good, I love heaven's feel I hope they make it into a movie like they did with infinite blade works. Sword Art Online: Kirito + Asuna ftw, virtual reality love, (the LN are very good too), also Death game
Gurren Lagann: Kamina + Guts to not give up + Simon
DeadmanWonderland: Dark, but still funny all the same
Btooom: Death game like Sword Art Online but in the real world, romance too.
Dakara Boku Wa, H Ga Dekinai.: Just too funny, once you watch the first episode lmfao
Naruto Shippuden: Naruto and Sasuke Rivalry, and struggles of each ninja, (SOBS NEJI WHY...)
Bleach: Ichigo (one who protects and his struggle to protect those he loves)[SOBS what a great guy], (can't wait to see Zangetsu soon in manga)
One Piece: Luffy, same with Ichigo protect Nakama and become a pirate king, but this anime has too many comedic moments too haha

The only good anime are Studio Ghibli/Hayao Miyazaki movies. Everything else I've ever seen isn't, well, good, imho.
Probably an unpopular opinion, but if someone can recommend me an anime I'll actually like I'll be surprised. I've tried a lot of what people say are the "best" and didn't like any of them.

Cowboy Bebop, Trigun, Samurai Champloo, Monster, Planetes, Akira (feature film) are those who always come up to my mind when I'm thinking about great anime.
FLCL is another animes series which I always come back to. It's really short, really sweet, and one of the first I ever watched.
Also, Ghost in The Shell (the first film) is absolutely gorgeous. It's one of the best animation films ever made and I'm really lucky to have seen it. The soundtrack is chilling!
PS: I have to admit I've stopped watching anime nowadays because most series are made for a younger audience, and it's really hard to find a mature and well written anime series. Once in a while I find a good one, but it's really rare.

Depends on your preferences... Most of "best" animes are choosen by a bunch or 13 years old, or are a heavvy niche product. So for someone not imersed on the medium, its hard give indications.
But you have to know that anime isnt a gender, its a entire media, so we got really good animes with deep storytelling, character development and adult context. (even if the seinen [young male adult/adult] demographic is way better represented on mangas)

I have a couple favorites.
Planetes is one of the best sci-fi anime series I've had the pleasure of watching. The art gives it a human-like aspect, and the whole story is fantastic.
Cowboy Bebop is easily my favorite from all. It's somewhat of a noir story set on a more or less cyberpunk futuristic landscape. Just imagine a cross between Noir Detective stories and Star Wars. And I absolute love the OST.
Monster is my favorite psychological thriller anime series. I've read practicly everything the manga author has written, and this anime follow the story quite close and stays true to the manga's artwork. You can almost feel what the characters are feeling at the moment.
Samurai Champloo... it's a samurai story with a love/hate triangle played to a hip-hop soundtrack. Some of the tracks were made by Nujabes, which passed away last year. You can't miss this one! Great action scenes!
And I can't forget Trigun. Trigun is your goofy/serious gunslinger anime. This series set the standard for years to come, and it's impossible not to love vash, as he struggles to maintain peace through force, much like Batman in Gotham.
And if we're talking about films, Akira takes the lead by miles. I've never seen any other animated film like this. I always go back and rewatch it every year.

Talking to gloves about school days got me interested in a discussion about anime. While normally I just use /a/ for anime discussions I feel they have degraded a lot recently and there are no good threads there anymore. Now on topic, I think I will have to put mine into different categories I have watched a lot of anime and there is so much to enjoy.
My favorite ending of all time for a anime has to go to, School Days (I won't answer why just watch it)
My favorite anime is really hard, it would be a toss out between Elfen Lied, Eden of the East, Madoka, and Clannad After Story
The first poster remind me of movies so I will do one for that to, it would be Spirited Away.
I was gonna originally do one for each genre, I will save that for another time as it takes a lot of effort considering there is at least 10~ genres. Depending on how specific I get.
