1) X-COM: Enemy Unknown (Defense) .. the old one.. I've finished this at least 10 times and will play it again
2) NeverWinter Nights ... I love AD$D and this one is my favorite, because I prefer playing with single character.. also there was a lot of multiplayer worlds created by player and a lot of great communities around it
3) World of Warcraft .. I've played Burning Crusade and Mists of Pandaria .. I thing those two are the best from WoW .. expect vanilla
some other games which are not worst then those 3 for me:
Terraria, Civilization series, Fallout series (didn't played F4 yet), classic games with AD&D rules (Baldur's Gate, Planescape Torment, Icewind Dale), second XCOM game (Terror from the Deep) and maybe the new one from Firaxis, Super Mario World, Borderlands 2, Sim City series, Qake 3 Arena and ton of other games.)

My most favorite games which i played so many times is a series of King's Bounty (The Legend, Crossworlds, Warriors of the North, Dark Side). But i have them on DVDs, not in Steam, so probably this is my random comment... :)

Not easy to pick 3 games from the hundreds I've played in the last decade. In no particular order, I'd go with Rogue Galaxy (on PS2), Metal Gear Solid 3 (again on PS2) and Bastion (PC). If you want me to stick to Steam, I would add something from the Civilization series and XCOM.
This leaves out XCOM, Age of Empires, some entries in the Final Fantasy Series, The Witcher, Mass Effect...

Portal (because i didn't finish 2 yet, please don't tell anyone) [lvl 3+]
They Bleed Pixels, pssshhttt no I'm not biased towards this at all! (aka Lanny Bleeds Pixels too) [lvl5+] (because I'm very very biased towards this game)
