Well, it's a hard choice. I think that mine are:
1) Tengen Toppa Gurren Lagann (RAW RAW FIGHT THE POWAH. But really, if pick only one - this is it. The anime of postmodern world, which besides really good story and soundtrack have many references to others anime and homages to other genres. Also, if you will start watching this anime - don't drop it near 12 or 13 episode - they little hard to watch but after that TTGL are getting even better than it was.)
2) Steins gate (What I love about this anime is a great story. Also I love that they don't braking their laws of time travel (which is very easy and happens in many time travel stories))
3) Wolf's rain (I don't want to spoil all the story for you but just look at this awesome opening. In short - the world in this anime is going to it's end and, according to legends, only wolves will know the path to a paradise. People think that they are dead for a centuries. But this isn't true. I believe you heard about werewoves, but in this anime it's not humans that turns to wolves, but wolves that look like people for another people. Well, just give it a try.)
4) Mushihi (Anime with soul which leave you with warm feelings after you will watch it.)
5) Cowboy Bebop (It's like western but in space. Also it has atmosphere similar to Firefly.)
6) Melancholy of Haruhi Suzumiya (What if real god was studying with you but she don't know that she is a god? What if she really wanted to meet a time travelers and espers and aliens and they was around her but she just can't see that? What if she have a melancholy?)
7) Paprika (Anime about dreaming. It was one of inspirations for Inception.)
8) Wonderful days (Rare korean anime which have good graphics and really stunning ending.)
If I needed to chose only one - that would definitely be a TTGL. But I can't pick only one, so these are my favorites :3
Sorry for some mistakes
