I'm recently working on Italian cuisine properly, I'm following recipes by this Italian guy.
Two days ago I've done carbonara that I'm so proud of (proper! no cream in it!) and yesterday I cooked a pot of bolognese, which simmered on low heat for almost 4 hours.

OMG, right?! I cooked mine with ordinary one, but I've done thorough research. For me, I found only one place that sells it online, vacuum sealed (probably), but I'd have to buy something around 0.5 kg as that was the smallest package. ¯_(ツ)_/¯ One day, tho, one day! 😂
About Gordon Ramsey, I've totally doubted his knowledge about food after I'd seen those Vincenzo's reactions videos and what the heck he'd been doing in his kitchen. 🤦♀️ That was, to say the least, terrible. 😅

Yeah, he´s such a show-off a lot of the time. Still he can be good too - I totally dig the stuff where he goes to out of the way places and gets cooking with the locals. Guess he´s at his his best when he has to experiment .. but a chef of his stature botchin` simply cooking Pasta in multiple ways 😥 unforgiveable

Well, since I didn't spot this thread until after I finished eating dinner, I don't have pictures to share this time. But tonight I had stir-fried bean thread noodles with elk, green bell pepper, jalapeños, scallions, and garlic scapes in a homemade spicy Thai curry.
I'll be cooking a few interesting dishes for some friends this coming weekend, so I'll take some pictures to share next time.

I am much the same. I learned how to cook at a very young age, and it has been a passion of mine ever since. I've always enjoyed trying new things and learning about cuisine from around the world. I also love experimenting with my own ideas and with ingredients that aren't well known (I started gardening specifically to have access to things I can't buy from local stores 🤣). I am also into foraging, and love coming up with ways to cook with wild edible plants and mushrooms.

I just moved some stuff to my PC I had sitting on phone for ages and found some food pictures.
I baked this a couple of weeks ago. I've done some simple things from baking mix before but this was the first cake I made from scratch. It's a really simple recipe but there still were some minor hitches because apparently I can't cook with recipes from my phone 😅 I forgot to add eggs and only noticed my mistake after the cake was already 15 minutes in the oven. Luckily it's a spongecake so I just added them then and reset the clock.

Carrot, Pumpkin and a hot curry mix are my favorite combo for a soup! Also goes very well with ginger
Try adding sweet potato for a creamier soup, it's awesome
I usually top it with fresh goat cheese for proteins and a pink peppercorn nougatine for some crunch but peanuts or walnuts will do in a pinch

I think the food industry is grabbing those directly from the slaughterhouses because they're cheap and get super soft.

Normaly i buy the Knoepfle because they are in a good quality for a low price.
I would suffer without, sometimes, beef on the plate because i nearly don't eat pig meat.
Lately i test a lot of vegan stuff because i got lactose intolerance on top to all my other illness stuff.
Sure i needed it harder... grrrr (i think the difficult level is now "nightmare" :-D)
So i need to avoid a lot that get sold in the shops, partly frustrating -lasagne, pizza, tiramisu, normal yoghurt, dozens of good cheese... cry- and the vegan stuff replace it only in a few cases and of course for a, much, higher price.

They do look good. I'm of the mind that if you can get a good product without having to make it yourself from scratch, it's worth saving the time for other elements on the plate you can't get as good as when you make them yourself. Like a nice sauce.

Damn. I have a friend who became lactose intolerant during the pandemic (not related to covid but he wasn't before). He is using lactase supplement and it seems to work for him. Have you tried that?
Yeah vegan food is very expensive for no reason at all. Used to be that it was because the producers were much smaller and it was way less industrial so more costly. Now it's all chain produced and processed so the cost went down but the price is still high. Go figure.

Yes, i can take lactase supplement but it costs each time 25 cents and it don't supress everytime all problems, they get, mostly, "only" lowered.
So sometimes i have still, strong, pain and/or run 2h always to the bathroom etc., so mostly not worth it in the end.
And the lactose free milk as example make problems too when i take 2 cups or more from it. I assume because it isn't fully lactose free in the end and "only" below a % limit. I am not sure about all this stuff beause i need a skin doctor appointment that he make the necessary tests. And to get appointments were difficult before corona and isn't easier now with. I hear always "we don't take new people".

I like greek joghurt but because of my lactose intolerance, that i found out a few months ago, i must say "no joghurt anymore for me" :o( because it would have the opposite effect and push a lot out :-D + very strong pains on top.

I don't judge ever when it comes to food. My gf loves her Caldo verde in the summer and I can't even touch the stuff unless there's snow outside lol

I have 3 different curries right now but, a as "english curry" labeled one is very spicy, so i don't use it often. I prefer the not so spicy ones because the spicy in the mouth isn't my problem but with open wounds in the bowel it isn't funny for a longer time^^.
To be honest i would not know how to make curry by myself because i know only a part of the, most commonly/mostly, used spices in it.
I use bought one, mostly organic ones from "Heuschreck" or "Sonnentor". It is a bit more expensive as the cheap shop stuff but it taste much better and i need lesser ammounts = i don't pay more and the taste is better.
Organic aren't everytime more expensive :o)

Even just regular spices can be pretty abrasive. Like cinnamon.
Hey there are very good pre-made mixes. They tend to blend all the flavors together too much over time for me as I like to taste the various spices in the blend but I have used them in a pinch or when I cook at a friend's.
Organic aren't everytime more expensive :o)

In general are, heavy, processed food my enemy. For the health and the moneypurse.
Buy as example semolina porridge "prepared/ready" that you only need to add milk and heat it up. It looks fast but you can buy it for 20% of the price without "ready", in germany as example from a russian or a turkish shop, and you need to do only a minute or two more work in the end. I don't known this for very long but since i know it i never bought a "ready package" again.
I think to use bio/organic food, spices is worth it when it isn't only higher priced and bring nothing.
So, as soon as the, often, higher price is weighted, in the same ammount, with better taste etc. it is worth for me.
And with spices is the calculation often very clear after you use them. When you don't need so much to have the same intense taste, but much better, then is the bit higher price compensated with the lesser needed ammount. Which means, in this case it should be worth for each one to buy that instead the normal (crap) spices from the discounters.
I would say, for people that smoke and/or want each food in XXL, it isn't worth to pay more for bio/organic food because they would not get happy.
For the rest i recommend it when it is a higher bio/organic lable as the EU Bio one (that one is more or less a joke).
In the end you get good stuff from the discounters too but i would never buy the cheapest meat. Before i eat this, i prefer not to eat meat.
I buy vegetables, mostly, from a farmer in my village, not organic raised but i can store the stuff, in general, 3-5x so long as the vegetables from the stores. On top it taste much better and it will not transported hundreds of kilometers.
I don't buy vegetables and fruits that grow in germany, from a other country. Salad from Spain ? Great^^ but not with me. Same for anything else that is available here.
Strawberries in the winter ? Nope, i don't support that crazy stuff.
Bananas from south america ? Yes, because they don't grow in germany :D (or more exactly only on a small island in a sea, in mini format, small ammounts and the costs are much too high for me as poor one)

I think it's more on the fact that producers who go after the "organic" label, put more care and effort into their produce than the big mass producers (who overproduce, whose overproduction leads to flavorless products, which leads to massive waste as most of this gets trashed, which leads to people buying less, etc, the vicious cycle of ridiculous agro-production of the modern western world) so I see what you mean.
I tend to buy my produce from a few producers/farmers I know from work and yes I prefer spending more for less than I will enjoy than getting massive amounts of food that tastes like water so I totally get it.

In germany it have a other term, so i were confused about IBS and it sounded so "soft".

With other words, i know best what i can and can't, after 25 years with the illness.
I had 2x a longer talk in a clinic and there were then people that learned the job 3 years and told me than whats good/bad but like "out of a book", like a checklist in the end.
Don't get me wrong, they mean it good and were, maybe, trying there best but the result was mediocre because when i needed to take 100mg Cortison daily and where each 2h hungry like i don't ate something for days, than it isn't helpful to tell someone he should not eat much (special when his weight is only around 54kg as male).
I had always pain, so of course i avoided to eat, often, for 3 days but that don't solved problems and in the clinics with 100mg cortison i were a food berserker, which means i had 5 buns + other stuff in the morning, 2 full meals at 12:00, for the evening 5 breads and between pudding, yoghurt, fruits. And as backup the astronauts drinks which should replace (for the most) meals, you need normaly 3/day ... i added 8 on top to all the food :-D
And after 4-6 weeks in the clinic i had than maybe +4 kg. Nearly each woman got envious and wanted to give me X kg from them ..... :-D
Of course are this the extremest examples.
In the end i know i can eat, a few, greek Pepperoni -they aren't so spicy as the italian ones- (i love them). Yes, it will burn 2x but i get only bigger problems when i combine it with something else that make problems or when i go over the "a few" limit, which happens in a few cases till i get reminded from my body^^ ... and than i learned the lesson for a longer time.
As example got milk and yoghurt recommended but because of the lactose problems were that in the end loke pushing each day oil in the fire and made me very heavy pains each day.
None assumed there could be a other reason as my "active bowel inflamation" and i found it only out after a surgery to cut the thick bowel completely out hadn't happened.
They sended me back home, after i was shaved and lines painted on my belly because they don't had a surgery room free. Yes, a absolute joke... but i am, in the end, happy that it happened or i would not have my thick bowel anymore (and still problems... different ones).
I weren't allowed to take my injections to supress my immun system till the next appointment for the surgery (you need to stop with it, at least, 6 weeks before the surgery) and they weren't able to say my directly when they will have the next free slot for the surgery.
So my bowel got crazy and i weren't anymore able to leave the flat. That was the only reason why i don't had milk for a longer timeframe and because of that i seen that it got better and better with each day. Of course not till a level of a healthy guy but on a level that i don't reached since many many many years. Then someone brought me milk and the fun begun again. That was the moment when i realized what the problem is/was and i am still sad, frustrated and angry on my bowel docs that none of them checked it because it is a common thing with my illness and i gave them more then enough infos that pointed very clear to it. I found that out when i readed a good bunch of stuff. So it was a shock for me how dumb/blind/lazy the docs were in this case. Maybe each one thought "a other had checked it" but it is still a weak excuse for the really heavy pains each day for years.
Back to the stuff....
I test a lot of stuff in a low ammount if i think it could make problems. As example beer, alcohol in general, mild spicy stuff etc. and i avoid a lot like all citrus fruits (which are a lot), juices with citrus fruits (which are a lot), heavy spicey stuff and so on.
Plus i calculate if i need to leave my flat at that or the next day or if it isn't so important because i don't need to go out if i will have problems because i say i want to eat spicey.
When i have appointments the next day i would not eat/drink something that could lead to problems, when i don't have appointments i decide if the taste/fun is worth the, maybe, problems after it.
Not perfect but better as to avoid all. It would not make me happy and lower my life quality by a lot.

Ugh. The amount of things most doctors let slide because they assume you already know or because they don't know themselves. FODMAP are a type of carbs that make a lot of people sick and was confused with gluten when it comes to allergies for decades.
Turns out that most people who thought they were "allergic to gluten" were actually not at all allergic to gluten but to those "FODMAP" (yeah they need a better name) which are often in food containing gluten but also in a lot of other food (some fruit and vegetables, lactose dairy etc)

If you hover over the pics it will tell you what it is ;) but yeah that is salmon in terriyaki sauce with rice and avocado and sesame spinach, it's one of my fav dishes when it needs to be quick.
And yeah I cook daily so maybe that's why, also post it on my SG event discord every day ;)

I always try to have loads of veggies and or some nuts/seeds in nearly every dish
Great tactics nutrition-wise. You get your load of vitamins and minerals and you don't have to swallow pills for that ;)
I used to eat a lot more fish when I was working in Italy. The French are not that interested in fish unless it comes in geometrical shapes and are hiding under fried crumbs. At least not in Paris.
Salmon is pretty ubiquitous but that's pretty much it so I load up when I go to Portugal with my gf. They know their fish.

Sadly it is hard to actually get good fish here in the middle of Germany, have to go to special places that sell to restaurants if you really want to get the good stuff. But it is something I try to get every so often. And yeah I never understood the love of fish sticks

That's dedication. With my job, you'd think that would be the easy solution for me but sadly most restaurants here source in the same place as every shop does so that's a no-go. Our chef actually had to go and deal with local fisheries in coastal towns to get proper fish.

We have a market place/hall for restaurants that also sells to the public on a few days of the week. With stands that sell top quality fish, meats, spices, veggies, fruits and whatever else you can imagine. It's not cheap, but if you want really fresh and good ingredients you can get them there. It's where you go if you need sushi grade fish or are looking for meats/cuts that are not usually sold in the supermarkets. There are artisan bakery's and butchers, wine vendors and I even think a flower shop or two that sell freshly cut flowers.

From my understanding there used to be a massive fresh produce market like this in Paris. It was literally in the center of the town. But, post WW2 trucks coming and going started to be a bother for the traffic around very touristy areas like the Louvre which is nearby, so they moved it to an area near Paris in the 70ies in Rungis. Unfortunately it was co-opted by brands and big resellers and it went downhill since then.
Nowadays it's almost impossible to find certain cuts of meats in butcher shops in Paris for example. The "butchers" don't do their own butchering so they receive cuts from the reseller in Rungis, packaged and ready to slice into steaks in the shop. Meanwhile the reseller is selling everything else directly to the food industry, which grinds and then uses the cheaper cuts, offal etc in packaged food, or animal food.
Pretty much the same with fruits and veggies. Paris is right in the middle of one of the largest agricultural regions in France but all the "farmers markets" actually only have stands selling you stuff from the resellers in Rungis. If you want the good stuff, you have to go out of town and buy it directly from the producers. Those that don't already sell to the resellers directly.

Oh that sucks. Here you at least have small markets in nearly every town still. Where the farmers go to sell some of their produce. And of course you can also buy directly from their farms but sadly these places have become fewer every year. Guess it is easier to just sell to the big companies instead.

From time to time selfmade food from myself.
Often with a direction by the price and sometimes with a needed time to make it.
Not presented professional and the pictures are made with a weak camera but i hope sometimes you feel the mouth orgasms that a part of the food made or at least you are hungry and cook then for your family or yourself :o)
At least in germany are the most women love it when you are able to cook good. All my fem. friends and girlfriends too.
Let's start with the last one. More food are at the comments :o)
Wagyu Beef burger with black forest bacon, cheese and salad.
I can recommend Wagyu beef mine is not from Japan - Kobe, it is from australia, its really worth the 5,50€ for 2 patties.
All together the burger costed me around 3,50€/each. At McDonalds you pay here over 5€ for a "better" burger and it is from a much lower quality then the self made. You need around 10 Min. to make them.
Don't look at the chaos around the plate, i paint at the last days in my flat~
