Chivalry Medieval Warfare - fun and stupid with tons of gore;

I remember having played an old racing car game called Armageddon.. Violence is the main objective.. you have to drive over people to keep playing from what I remember.. It's ancient old so dunno how much it can help you xD basically it's just what came to my mind when I thought of violence in videogames xD

State of Emergency (first one, not the second one) was pretty violent and it was really fun.
It's an old game (2002) but really fun. Like stupid, gone postal fun.

Max Payne 3 has a pretty extreme amount of violence. Especially if you continue shooting at people like I do. Slow-motion rounds to the face over & over & over & over.
