I would imagine Super Naughty Maid 2 is frequently played one handed....
In all seriousness though you should have no trouble with turn based games like X-Com, management sims like EHM or base building like Surviving Mars, Most puzzle games (Mahjong, Bubble Bobble etc). You said you don't like point and click but Monkey Island is pretty amusing IMO if you've never tried it.
Grand strategy games like Europa Universalis could probably be played one handed but your reaction times might be slower than desired.
If you have an N64 a few of those games could be played one handed to a degree. Gotta love those controllers.
Alternatively if you have a backlog of steam games try them out, you'll see what you can play, what you might want to play, and what you've never tried but should really uninstall...
Get well soon!

Damn, that sucks :(
I think those games are interesting and should be playable with one hand:
Domina
Chroma Squad
Dungeons 2 and probably the 3rd also
I guess the XCOM games should also work (at least the turn based ones) :)

https://store.steampowered.com/app/495890/Montaro/ is a speedrunner that is controlled by left-click alone.
https://store.steampowered.com/bundle/5893/12_Labours_of_Hercules_7in1_Bundle/ are all mouse-only games.
you could probably play hack-and-slash crpgs like Torchlight et al if you map the pause button to a push of your scroll wheel?
also turn-based crpgs are good for only-mouse. i enjoyed the Avernum series a lot, good balance of humor with the epic fantasy setting.

A lot of turn-base game, RPG, card or board games can be play with 1 hand. So you can try games like
OCTOPATH TRAVELER
Civilization V
NEO Scavenger
Darkest Dungeon.
Phoenix Wright: Ace Attorney Trilogy

It all comes down to your taste in gaming in the end. There are lots and lots of games that use only mouse and no keyboard.
RTS games like Civilisation, Age of Wonders, Age of Empires (and any game within the same genre) are typically played purely via mouse click.
Digital board games like Armello. (It's one of the better ones and not boring to play solo if you need to)
Xcom: Enemy Within or Enemy Unknown and the Shadowrun Series only use mouse.
Hearthstone
Hidden Object games or Time management games like Hercules series.
I would also say Dungeons 2, but might require keyboard in the beginning of the story, can't recall. I loved the DLC "A game of winter" especially since it was a lot more difficult than the base game.
You already own a few of them, so why not install and check them out. :)

Telltale games might not be a great fit. You regularly need to mash keyboard buttons and click on things using the mouse (not at the same time, but you need to rapidly switch between the two).
If you're fine with using your elbow, or the palm of your hurt hand or something as an aid while playing (to hit space bar with), then the Infinity Engine RPGs should be a pretty good fit. Those are:
-Baldur's Gate 1-2
-Icewind Dale 1-2
-Planescape Torment
And the infinity engine "clone":
-Pillars of Eternity 1 & 2 (I actually like these more than the infinity engine games)
Other games that might be of interest are 4X games like:
-Master of Orion (1, 2 or the recent reboot, but not 3. Never 3)
-Civilization series
-Endless Space & Endless Legend
-Master of Magic (GOG)
And if you like turnbased strategy, but want something other than pure 4X:
-Xcom
-Age of Wonders 1 & 3 (I guess 2 as well, I just never liked it and its standalone expansion)
-Heroes of Might and Magic series (not including the 6, and absolutely not 7)
-Panzer Corps (really not 4X), or if you prefer sci-fi Warhammer 40.000: Armageddon
-Warhammer 40.000 Sanctus Reach (this was one of the best games I played last year!)
Or how about some turnbased RPGs?
-Fallout 1 &2
-Divinity: Original Sin (might feel a bit clumsy though)
-Wasteland 2
-Torment: Tides of Numenera
And how about something not turnbased for once?
Majesty: The Fantasy Kingdom Sim

Sorry to read about your hand! Lots of great suggestions in the thread so I'll just say "One Finger Death Punch" but be careful not to overdo it on that one because you want to be able to keep using your other hand for the next month or so.
Really just wanted to thank your for the GA, wish you well and bump the thread.

Really hope that with physio you can find ways to recover a lot of fine motor function.
In the meantime, there's a steam tag specifically for mouse only games. They should all fit the bill.

literally, all strategy, tactical strategy, turn based crpgs, etc.
Siralim 1+2+3, you literally need only WASD+E+Q+Tab for it, if you like monster collecting game, I have about 600hours in first 2, not had the free time yet so avoided buying 3 so far.

"let alone play anything using a mouse and keyboard"
Some mouses have around 10 buttons or more, so many games should be possible with only one hand and a mouse.
pics of mmo mouses on google

I thought you were being lewd when I saw the title but I'm sorry to hear about your hand. You have a tonne of suggestions already so I will just tell you that there are lots of turn based strategy gems that only use a mouse or being turn based you can take your time with keyboard if required. Some of my favourites include Xcom, Darkest Dungeon and CKII and Massive Challice.

Transistor can be played with only mouse, but required at least two extra buttons on it.
Get well!

Sorry to hear about what happened, I hope you'll be able to recover and get the use of your hand back with time.
In addition to all the great games that have been mentioned already, I'll recommend Defender's Quest - it's an RPG / tower defense game which was great fun for someone who doesn't normally like tower defense games, and it has some of the best accessibility features I've seen. Not only can you play with one hand, but you can play with just the mouse, or just the keyboard, and you have complete control over the flow of time from paused to slow to ridiculously fast.
Also, depending on what it is you dislike about point & click adventure games, I may have some great ones to recommend. The Longest Journey may look dated, but it has one of the best stories ever, though you will probably need to consult a guide a few times. Kathy Rain is more modern with an interesting story, and is pretty straightforward (though you may still need a guide for a couple points towards the end). Most of the Wadjet Eye games are really good - Gemini Rue, the Blackwell series, Resonance, Technobabylon, Shardlight, and Unavowed in particular. And Amonita make lovely games that are whimsical and largely dispense with the inventory management - the Samorost series, Botanicula, and Chuchel in particular.

Into The Breach is a cool puzzle game, made by the same people that made FTL, really cool, has somewhat of a story.
Opus Magnum is a cool puzzle 'story' game all about automation.
Hope it all gets better soon, sorry to hear what you are having to go through.

I hope you recover soon.
Games you can play with one hand include Baseball Mogul (any version), the Civilization games (though they are easier with two hands.
Sid Meier's Pirates is designed to play with only a numpad (a mouse also works).
I've recently been enjoying the game "Sid Meier's Ace Patrol"
Ticket to Ride is very fun.

To make a long story short, my (thankfully not dominant) left hand was severely crushed and with metal pins all throughout my fingers I can't go back to work and can't even think about the games I'd usually waste my time off with using a controller, let alone play anything using a mouse and keyboard...gotta love how MCC flights finally start next week apparently too :(
I need something to occupy my time for at least the next 4 weeks, my biggest problem is point & click games are my absolute least favorite genre...I'd still be willing to try some if the story was captivating enough though...I'll likely be giving TWD and some other Telltale games a try, definitely the 2d Fallouts and Wasteland 2 because those seem most up my alley. Just curious what games you guys might have played and loved that you don't need two hands for!
Obligatory giveaway open to everyone just delete the part it says to
Edit: Wow, thank you for all the great recommendations and kind words they really do mean a lot. I'll soon be trying many of what I already own and looking towards splurging on the ones I don't once the summer sale starts haha. Again thank you guys y'all are an awesome community
