I don't understand why they ended K they way they did. Did I miss something or is it really ridiculous?

I haven't watched the Return of the KIngs =) so I can only discuss the 1st season ending which I think isn't the one you are talking about =)
Well... I actually think it is pretty much possible they could make some weird ending just because this anime is somewhat a promo for manga/ranobe (like many others).
Anyways after your questuion I am curious and I'll try to watch it soon.

Didn't Shiro unnecessarily sacrifice himself when he could have just let the 7th king take the Red one since he was going to die anyways?

Well this actually sounds stunningly logical if you aren't Shiro :D
Though if I remember it right (spoiler alert - any1 who hasn't seen Project K season 1 ending shouldn't read this):
The 7th king has somewhat gone crazy. His personality was unstable since he somewhat devoured a lot of other people. Lots of personalities in 1 body. It is also implied that Shiro is the one to blame for what happened to him (or mb he is too kind and takes responsibility for everything :D). So basically Shiro wanted to correct his mistake while it is logical to not let a scitzophreniac guy take any1. Still the most improtant things were:
1- Only a King can kill a King
2- The Red King wants to avenge his friend (and Shiro probably sympathises with him and is feeling guilty mb)
3- Shiro is an Immortal king while the 7th is mortal, so technically it could make more sense if Shiro could kill the 7th earlier but he probably wanted Red to die in peace with his vengeance accomplished. <--- this probably was the most important reason.
Sorry for this much text :D I am also not quite sure I really answered your question and what I wrote is just my opinion so it can be misleading =(. I am also sure this is explained in manga and it is pretty complicated for me :D

Another spoiler like above, be warned.
That part where Kuro was carrying the girl from school (I forgot her name again...) away, and she couldn't even remember Shiro's name, that made me want to cry... And Neko looking around for Shiro afterwards...
Uggh, but I didn't realize there was a second season and after reading the first episodes description, I'm hopeful things'll get better again. ;)

Yeah, well I also doubted his immortality at that point...Especially when Neko was collecting Shiro's belongings... And I don't remember the girl's name either so I researched it and her name is.... JOHN CENA tu-tu-du-tu :D

Yeah, the series has it's cute parts :) But the gore and guts is there, also the horror element. You can watch the first scene via my youtube link. It has gore and some nudity so don't watch if it bothers you: Elfen Lied-Intro Scene. Just warning so that I won't mentally scar anyone.
