Thanks a lot for the GAs, Shura :)
Here some recommendations I don't see in other comments:
Bloodstained (A modern Castlevania, which of course brings us to...)
Castlevania (I'd actually recommend Symphony of the Night, but it's not on steam :( )
Cave Story (Old classic)
Momodora (You can also find the older games in the serie on itch.io )
The next are not strictly japanese, but the style is there:
Cross Code (I loved this, but maybe it's me)
Doki Doki Literature Club! (Freebie)
Eternal Senia (Freebie 2. I think this is by chinese devs, but I'm not sure)
Helltaker (Freebie 3, top soundtrack)
Volcano Princess (Ever played Princess Maker? Same thing. Also chinese devs)

Shit, I accidentally closed the page and lost my comment. Let me try again and hope I don't mess up the formatting too badly.
If you're a fan of turn-based JRPGs, check out the Trails series. The first trilogy, Trails in the Sky (and to a lesser extent, the following Trails from Zero/Trails to Azure duology) are basically love letters to the mid/late-'90s era of JRPGs, while the next sagas (Trails of Cold Steel, Trails into Reverie, the upcoming Trails through Daybreak) switch to a more modern 3D format, rely much more heavily on anime tropes, and spend a lot more time focusing on bathing with minors.
If you're okay with visual novels, Higurashi (Ch.1 free on Steam/GOG) and Umineko are staples of the mystery/horror genre for a reason, although they both tend to be longer than strictly necessary and feature somewhat divisive conclusions. Not dissimilarly, The House in Fata Morgana is one of the best novels I've read in the last fifteen years; it's by a Japanese indie studio and at points falls into some common tropes, but it deliberately eschews anime stylings in favor of something more European/Gothic.
Another VN, Steins;Gate is a mix of lighthearted slice-of-life/romantic comedy, nonsense science-fiction, and thriller/horror elements that comes together wonderfully. Steins;Gate ELITE is a version of it that's quite literally an anime game, with the script of the original overlaid on anime scenes, either taken directly from the anime adaptation or newly-produced for this version; I don't really recommend it over the original, though, as it cuts most of the interactivity, loses the original artstyle, and doesn't bother restoring one character's chapter that was heavily truncated for the anime adaptation, although it does at least fix one of the anime's biggest characterization missteps. Steins;Gate 0 is a much bleaker read, though despite the name it's very much a sequel to the original game, with a story that sort of spins out of a version of the 'true end' of the original game and featuring more distinct routes/story branches. Linear Bounded Phenogram is a delightful collection of non-canon short stories, putting the spotlight on various members of Steins;Gate's cast, but unfortunately it's not available for separate purchase; unless you manually added it to your library for the first couple hours it was live, it's only available as a bonus for buying ELITE. There's also the dating sim spinoff but we're just not gonna talk about that. There's a number of other works set in the same general universe, but the Steins;Gate games are the standout - I'm not really recommending Chaos;Head or Chaos;Child because while they're excellent horror works on their own, they both have serious flaws that need third-party patches to fix - the S;G games mostly only have bad fonts/kerning/line breaks, aside from some poorly translated messages in 0.
Slightly more interactive! AI: The Somnium Files is a series of cyber-noir murder mystery games where nothing is as it seems and everything slowly slides towards absurdism - and that's before you start diving into suspects' dream states. These are both text/dialogue heavy but broken up by investigative and interrogative scenes, plus platform/puzzle elements in the Somnium dreamscapes. The plots are as twist-heavy and borderline nonsensical as expected of Kotaro Uchikoshi (Zero Escape, and the older Infinity visual novel series), with character designs by Yūsuke Kozaki (No More Heroes, Fire Emblem Awakening/Fates, Pokemon Go)
I see a lot of good stuff in your library that's got playtime but no acheivements, indicating maybe card farming? Might I suggest trying Tales of Berseria, CODE VEIN, or Tokyo Xanadu if you're looking for an action RPG? Perhaps Root Double (from another mind that spawned the aforementioned Infinity series) if you enjoy overly-complex sci-fi/disaster visual novels with plenty of bad ends? How about Omega Labyrinth Life if you're after softcore yuri hentai disguised as a Mystery Dungeon game? The possibilities are endless, my friend.

All very detailed, thanks for that, I'll take a closer look at this post later. Yes, I farm cards, but I still want to play these games in the future, I just saved them for later because they seem very interesting to me, so I'm saving the best for last, so to speak, because I want to give every game in my library a chance and test it at least once. And since it triggers me a bit if I haven't gotten all the cards or achievements, so something is unfinished, I can't relax XD. I like complete stats, I don't know why

The closest thing to an anime game I can recommend is Ib or Yume Nikki

Yakuza series!
Not literally anime but very Japanese and as such a lot of tropes and general feel can be anime-esque. Unless you care only about the visuals... Then you should play it anyway because it's still like one of the best game series ever

Try these VNs. The first one is relatively short, and it's a prequel to the second one.

The game is beautifully crafted and has a good soundtrack. Here is also the interview with the developer. I suggest watching it after playing the game https://www.youtube.com/watch?v=vqqRebVUqmg

You probably will know most if not all of these, but they're still good anime and you should watch them :)

Steam is a great platform where you can find a lot of things.

I would also be happy about hidden gems that are not so well known.
