Bonus points if it's an original score.
And here are my top two picks, because I couldn't only pick one: Hotline Miami and Rise of the Tomb Raider

Numerous Soundtracks follow me each day throughout all my years of gaming:

1.) Fortress of Lies:
https://youtu.be/UvIc2b4im_Q?t=81
(The feeling you get, listening to this mystery soundtrack while exploring is insane)

2.) TF-29 - Deus Ex:
https://www.youtube.com/watch?v=xMwpfR-ELnc

3.) Mirror's Edge Menu Music from 2008 - this thing is timeless. Just imagine yourself on top of a high building, blue sky and wind blowing in your face while 25 degrees outside. This soundtrack has a special place in my heart and is running 24/7 on Summer days:
https://www.youtube.com/watch?v=PWXao2AVDF8
(0:37 - listen to that part... ♥)

4.) The Touryst - Deep Diving:
https://youtu.be/xNTKGunERDI
(Exploring Underwater secret with this music got me...)

5.) Mirror's Edge Catalyst:
https://youtu.be/yIDvr_MQcAo?t=2147
(Just listen to this for a minute and feel the futuristic, calm environment thinking about yourself sitting on top of a building - summer breeze...)

Some extra Catalyst:

A lot of my favourites are already on this topic, but just wanted to mention that I also love the remember me soundtrack. Love the glitch orchestral sound they came up with. https://www.youtube.com/watch?v=0TOtsjFg69g&t=22s&ab_channel=GameOST%27s
Olivier Deriviere makes a lot of great sound tracks.

I've listened to some of them before, my absolute favorite from your list is probably the Witcher 3 one. I'm probably a bit biased as well since it's my favorite game and I love pretty much everything about it.

I love Mirror's Edge's Still Alive
Also, Metal Gear Solid 5's Sins of the Father. I really should just go and play the full series at a point, but I'm a bit afraid of the Kojima factor :D

I should also mention this song from Silent Hill Shattered Memories https://www.youtube.com/watch?v=Fm60NwsQewE

This one is probably my favorite as an in-game song, it's from ps1 game Apocalypse https://www.youtube.com/watch?v=u1nsXxeuz4o

After downloading a ~500Mb file on a dial-up connection for installing Ultima Online(about 1998)
Took ages. It would disconnect often and lose the progress.
But eventually I got it finished.
Then you hear this

First thing on my list of things to do when a time machine is invented is to go back to 1998 and tell me about those programs :)
UO was really amazing. My first RPG/MMO. My computer was terrible so I tamed all the rats/dogs/cats and every other animal and if someone entered my house I'd release them. So much fun :D

Pretty much Andrew Hulshult's entire catalog. And those Polish guys who worked on Bulletstorm, Shadow Warrior, Witcher, etc.

EDIT: OK, I guess I can post an example or two:

Departure to Destruction (DUSK)
The Brakes Are Out (Bulletstorm)
A Nearly Peaceful Place (Witcher 2)

The one from Witcher 2 makes me sad and I don't know why, it's really nice. Also, the songs from Bethesda's games are really great, when they still cared about making games and not cash grab expantions.

Elena Siegman sang a number of songs for Treyarch when they made Call of Duty World at War. The first one you hear in zombies mode after beating the game or playing co-op zombies is Lullaby for a Deadman; Then The One, and I believe Beauty of Annihilation was the last one put into a zombie map. These songs would end up becoming iconic to call of duty zombies that they were put into the Black Op’s versions with new songs being made as well such as 115.

I'm not listening to all of them, many I already know, some that aren't really my cup of tea I just sort of ignore and say nothing about them. For the ones that are long, I only listen to bits and parts of them. And those that I really like I listen to them fully and save for later as well. I couldn't possibly listen to everything, especially since many people linked whole playlists or hours long full OSTs.

I don't about the greatest song, I like too many to list, but I know the only game series where the music was 100% essential to my experience because it explained the mood and setting perfectly was Ace Attorney. Here is a sample.

https://www.youtube.com/watch?v=KGOmsZfSJuw

A bonus earworm from a game I played recently (Chroma Squad). It played on the main management screen and was stuck in my head for weeks.
https://www.youtube.com/watch?v=jjPfvlel96Q

The entire OST of this game is just right, and the main theme parody intro is a brilliant fit

Hitman:Blood Money - Ave Maria (not on actual ost since it's a cover of Ellens dritter Gesang by Franz Schubert) (pretty much all the ost to all the hitman games is amazing but this is my favorite)

Darksiders II - Guardian Theme (this is amazing, trust me)

World of Warcraft - OST It's magical.

Darksiders - Flight Over Ruined Eden

Warframe - We All Lift Together

RYSE Son of Rome - Descend Into Darkness

Counter-Strike:Condition Zero

FInal Fantasy XIV - Rak'Tika Greatwood Theme "Civilizations <- This song is somehow a meme because of "La-Hee", but lets be honest, this song is amazing.

Claw(monolith) - Level 1 theme

Risen - Main Theme

The Dark Eye Memoria - End Theme

ARK: Survival Evolved - Main Themes(I personally like the Island, Aberration and Genesis 1 the best)

Path of Exile: Atlas of Worlds Trailer

No Mans Sky Debutante Trailer Theme

I might list more, many of the ones I already like, such as Supaplex, Mirrors Edge, Homeworld, etc. have already been listed.

PS: If unreleased games count, put Dead Island 2 trailer theme on the list.

Andrew Hulshult - The Blood Swamps Heavy Combat Music (DOOM Eternal The Ancient Gods part 1 OST)
https://www.youtube.com/watch?v=1dLV-pbbBUg

Mick Gordon - BFG 10,000 (DOOM Eternal OST)
https://www.youtube.com/watch?v=zKbmBV7CBrw

These are two of my favorites from DOOM Eternal, but the whole OST is outstanding. DOOM 2016 and Eternal have two of the best soundtracks of games in recent years imo, but I'm probably a bit biased here since I love Doom and I'm a Metalhead :D

I'm kind of offended that no one has mentioned any of the classic Resident Evil games yet lol, here are few of favorites:

Resident Evil - Save Room Theme
https://www.youtube.com/watch?v=vb_Bb8JA2pg

Resident Evil 2 - R.P.D. Main Hall
https://www.youtube.com/watch?v=Nm6nEwD4SF4

Resident Evil 3 - Free From Fear (Save Room Theme)
https://www.youtube.com/watch?v=nblPAN7DaVQ
(Edit: and here's the RE3 Remake version as a bonus: Resident Evil 3 Remake - Save Room Theme)

But again, there's plenty more where that came from.

A lot of other good tracks that others have mentioned as well. There's SO many good game tracks that it would probably take months to list them all.

The Resident Evil games do a really good job at setting the mood of the game with the music.
And Doom is indeed a good example of how to make the music a big part of the gameplay by hyping you up and getting your blood pumping to exterminate some demons!
