A way to make sure I don't miss any specials for the games I want, but that I don't want as badly as those I'd be willing to pay full price/the current price for (games where I possibly own a more basic version already in Retail form, or which I'm not 100% sure I'll like but I'd really like to try or where I think the asking price is too high VS the fun they'll give more or just those I'm content waiting for that aren't total must-haves).

Wishlist for me is a way for Steam to know what games do you want, games on demand. So they can put higher or lower discounts to games of their choice.
If you think twice, this is kind of "spyware". As they will know what you are interested in.
Of course, it's a way to have the games that you want later and get notified when they are cheaper. They want to make you think this innocent way.
·Example: 500 gamers have Skyrim in their wishlist. And only 100 gamers have Batman Origins (or any other game) in their wishlist.
Steam play their cards and do the next.
Discount of -33% for Skyrim. And no discount at all for Batman. Of course they will prefer to sell Skyrim as there are more buyers, so more money for them if the expectations are 100% true.
And things alike to this. Is like the market works.
In any case, this is a bit random, not all people that have Skyrim will buy it right now. But this is an example of how will go the marketing mind. Games on demand. It's all what they need to know to make this move or any other with sales. Like in a chess match.
Why do you think they have changed the market for buying/selling cards too?
Now you can't choose the seller. You set card or a price, and they will choose the more convenient seller for you (and for them in reality). This has nothing in common with being paranoid or conspiracy, this is how the market works. Basic stuff.
·Example: They have two sellers. One of them has 25 bucks in his Steam wallet for selling his cards. Another seller has only 2,5 dollars. You pay for the same card, which one do you think Steam will choose "randomly" as seller? (The one who makes them richer and get better benefits)
I don't know which one is more profitting for them; it could be the guy with more money in their Steam wallet, this way, they get returned all that money for them if he expend that money right now.
Or it could be the contrary, the card could be from the one with less money, so the guy with 25 bucks can't buy with "fake" money.
In this example, i don't know which of both could give more profit to Steam as i'm not into marketing (i hate it) just my point is that is another measure of control to have their sales and their marketing graphics in order the way they want.
We are just mere puppets.

I dont really know why do i add games to my wishlist. I mean, i never buy games, except from bundles, and we all know the games i have wishlisted will probably never be in a bundle.
Also people gift me games, but never the ones i want.

I just use it for games that i'm really really interested in and plan on purchasing one day. Games on wishlist are also ordered from most wanted to least wanted

Wish, meaning I wish I had it, but I don't. Easy.
In my case, as 99% of users here, to remind some games not so known that they attracted me and to highlight on SG. But also to help on trades or bundle key swaps, so other users know in which I'm interested in. Also some groups on SG get an extra use to determine if a giveaway about a game that apparently everyone on the group has, may have members missing it and wanting it.

it helps that I have an isthereanydeal.com account and it auto-syncs with my wishlist so I know when something I'm targeting hopefully goes on sale

I have no intention other than to keep track of games I'm going to buy and to get alerts when a game is on sale. That said I have gifted and received games (spare copies) because they are on wishlists.
