I've for quite some time been able to play Europa Universalis 4. I didn't imagine me sinking so many hours into it, but I'm almost at 1.000 hours, and I'm far from done playing it. I foresee me playing that one for as long as they develop it, and probably a good time afterwards as well.
That said though, I don't really have any exclusive go-to game that I can just always start up and enjoy. The mood still has to hit me, but EU4 is probably what comes closest to my go-to game.
I return to Metro 2033 once in a while as well for a playthrough, one of the best games I've ever played.
Diablo 3 can tickle my fancy once in a while as well whenever new content rolls out, but my play throughs are getting a bit short now, so I don't know how much rolling a new character each season can keep me entertained anymore.
This War Of Mine is another game for me I sometimes visit for a playthrough. I really love the atmosphere in that one. Great stuff.
I few games I really want to revisit though is Banner Saga and Sunless Sea.

Currently it's One Finger Death Punch for me, even though I've not played it for long just yet. It just is a perfect game to sit back for a bit and play (I use a controller for it), yet still providing enough of a challenge to keep it interesting.
I agree on the replayability on Dying Light as well. It's an amazing game, but once you beat it, there is not much left to do.

Portal 2 - I never run out of custom maps because the community keeps making 'em :D
Morrowind - an oldie but that just means it has even more mods! I just have to make sure not to get carried away and install too many at once that end up conflicting... Fallout: New Vegas and Skyrim to a lesser extent too (I'd probably give Fallout 3 another run too with some new mods if it wasn't such a lot of work to get it to run)
and usually a GTA/Saints Row/etc game too, though at the moment Mad Max is filling that role

I'm really interested in knowing your absolute favorite games that you always can "go-to" when you're bored. These are the games that you can play anytime, over and over again, and constantly find enjoyment.
This doesn't include games that you played a few times and stopped. Even if the game was great the first time you played it. Great examples of this would be The Stanley Parable (outstanding game but lacks replayability after completing all the endings) and Tell-Tale games.
