For me it would be Freespace: The Great War & Freespace 2, Skies Of Arcadia (Dreamcast Version), Frontier; Elite 2 & First Encounters and Total Annihilation (which has been installed on every PC I've ever owned :D )

Harvest Moon. Probably one of my favorite game(s) of all time. I never hear anyone talk about it, but they keep coming out with new ones so someone else must be playing them lol.

Twisted Metal: Black for PS2.

I've seen people mention XIII, Sacrifice, Summoner here, all are wonderful games that I love and I highly recommend.
I'd also add Bard's Tale, Primitive Wars, OttoMatic and Rune to the list. Rune was damn near the best third-person action game I've ever played, very grim and atmospheric, good memories.
