The first Splinter Cell - a friend of mine played the game before me and didn't manage to kill the final boss. Knowing that I tried to beat the boss a couple of times, but also failed. So I just thought that if he didn't manage to beat it, I also won't (I considered him a more skilled gamer).
The first Dragon Age - I quit just before the final boss. There were still some side quests to do and I couldn't force myself to finish the game before finishing them. But at the same time I started to get weary of the game (cause I played for a long time). So I just got really frustrated and quit altogether.
The first Star Wolves - well, technically, I beat it, but I had to use cheats or a trainer. Probably, I could have beaten the final boss myself, but for that I'd have to replay the last 10-15 hours. And was getting weary of the game as well :D
Gothic 2 with the addon - same as Dragon Age, coould have gone for the final boss, but there were still many unfinished side quests. (Also before that I had a similar situation with Gothic 1, but I quit mid game. But then eventually beat it).
Dark Souls 2 - finished the main storyline and 1 DLC. Got tired of it.
I'm sure there are many more I don't remember,
So yeah, I've ditched quite a few games :D Basically too many side quests frustrate me. I can not NOT finish them, but I also often can't finish them because there are so many of them and they're so tedious.
To make the thing worse - I like to take the things slow and explore every corner of the game, so it usually takes me 1.5-2 times longer to beat a game than it would take a usual person. So it often feels I play a game for ages and often I have to force myself to finish it.

I'm not sure either. I don't remember anything particularly bad about controls or aim (PC). But I played it shortly after release (also played the demo before release). Maybe Moogal played it more recently and compared to more recent games it has wore controls?

Dragon Age 1, oof. Yeah. I feel that. I didn't get as far as you, but the combat difficulty really ramped at certain times. Some random encounters were crazy. Though maybe that's just because I was playing as a mage? I dunno.
The first Splinter Cell probably didn't age very well, but I actually enjoyed the rest of the series on PC given it added a quicksave feature to scum with. That series had a pretty rocky stealth design that relied too much on trial and error at times. I completed the first on the OG xbox, then tried the next one but just couldn't get into it due to the wonky stealth design aspect. The rest I gave a shot on PC and really liked though.

I've regretted I haven't picked a mage. It seemed more fun. Also wasn't it like the easiest (or rather more versatile) class? I remember there was a guide (or a challenge?) how to beat the game solo with a mage (or was it about the Awakening DLC?)

The most recent I can think of is Leisure Suit Larry Reloaded - missing 1 achievement that involves getting a jackpot on a slot machine. Totally random, and I got sick of trying. Over the years, I've given up on many games because they changed from fun to frustrating, often around the final level or boss.

I have missed 1 achievement in Lego lord of the rings due to a bug.
DLC quest because I'm too lazy to go back to finish the last achievement or two.
Metroid prime 2, I couldn't finish the last boss.
The original star wars rogue squadron, I just couldn't get that final gold medal on the battle of Hoth.
I think I can confidently put Skyrim on here, I've got 300+ hours logged on it but I have never finished the main quest, even though I still play it occasionally!
The original Halo. I remember running away from the flood, but never went back to finish it.

Heh, more than one. Mostly regret Divinity: Original Sin, came to the very dragon, wiped my entire party like nothing... then got a bit better but still couldn't dent him... then read online and realized that all of the magic schools I was using throughout the game don't affect the dragon at all and physical melee damage is ridiculously low/none and basically you have to have a build from a certain range of skills/magic in order to win that fight... Tried changing things, tried going back a few saves to the past to change the build... but lost the will to play the end of the game again and just removed it after a few months.

Overcooked. Played it with my girlfriend but the final stage was way TOO long (over 15 mins, when the longest "normal" level was around 5 mins), we lose a couple of times and she got bored of starting all over again.
Also, Batman: Arkham City. I was missing only one challenge for 100% (something about flying without touching ground for X seconds or smt like that). Spent days trying to get it and obtain the last Joker Audio Tape, but got frustrated before making it.

GTA 4 because every time I try to play it I end up realizing the game just sucks if I'm not having fun lplaying it like the other games (I'm someone who would say GTA5 might be the best game ever made, so that's gotta be pretty telling of how much 4 really gets it wrong).
Also never get to the final boss on most Final Fantasy games I've started with a couple exceptions (I think just 7 and 15). The majority I actually did enjoy despite drifting away for whatever reason, though FF 13 is like GTA4 where twice I've gotten at least half-way through before accepting it just sucks and making a conscious choice to stop wasting my time to say i've completed it.

Lately i bought GRIS , it looks like a piece of art, i mean the graphics ,soundtracks ,ambient etc. all these are fascinating but somehow it turned up to become too boring for me to finish, maybe i was not in the mood idk , i almost completed it i think
Also ; Metal Gear Revengeance : Stopped playing at the final boss , Senator Armstrong , fight was quite hard yet that sword pattern sequence was irritating for me so i gave up .

I have a few that I have unfinished that I fully intend to finish and I class as being in my rotation.
There's a couple that I've abandoned which I will eventually go back to but at this point in time that'll be so far down the line I'll class them as unfinished.
Batman Origins, I got a gamebreaking bug which would crash the game and I couldn't bring myself to restart the game. One day I'll go back to it but it ruined Batman for me which is one of my favourite series, recently re-did City so I'm gearing up for another pop at Origins.
100% Orange Juice, I've 100%'d that game like 4 times, they keep bringing out DLC and I just thought fuck it. I cba going back to it now, its so grindy and it's not much fun without a bunch of friends to play with.
Super Meat Boy, too hard and frustrating to play for long enough to improve. Too hard to get any further with current skill level. I just don't really enjoy the gameplay loop as much as I thought I would and how much everyone else does. I don't think it's bad, but it's not my thing.
Spelunky, good game, same problem with Meat Boy, can't bring myself to dedicate the amount of time I'd need to, to "git gud" and make decent enough progress to the end.

Return to Castle Wolfenstein. If I recall that last battle I gave up on. I intended to complete it, but don't think I ended up doing so.
(There are many games I haven't completed, but that was one of the few I remember getting right near the end and stopping.)

The original Gauntlet on the NES. I could never get past like level 96 or something. But then my playstyle was never just running through a level as fast as possible, which it's probably easier if you just run through this part as an (fully-upgraded) elf.

I had a strange habit of doing that with a few old RPGs, Final Fantasy XII, X, Granstream Saga, Legend of Dragoon, Kartia, Grandia-I'm not sure if it was just not wanting the game to be over so I'd play them over and over. Trying to get 100% achievements in modern games just seems to be a waste of time given how many things there are to play these day though.

Almost my every game if you count it like 100% achievements, oof. Some games tire out after several sits and not even getting you near the end though. One of those for me was probably Torchlight 2, and I even like the game! I'll still tackle it one day, soon, for sure.

I recently finished Rise of the Tomb Raider, 100%ed the main campaign and the craft manor but I simply couldn't be asked to tackle the challenge modes, way too much extra stuff. Same goes for hunting down every single achievment, some ask you to do very specific things that are kinda hard to set up when you have to count on the AI.
There's also Brütal Legend, did all the missions, even the side stuff, yet I got completely stuck on the final battle and never managed to beat it.

Games you nearly completed, but maybe a quest was too tough or the last boss beat you? I can start with a few:
Final Fantasy VII - never finished the last boss after trying a few times
Medievil 2 - also did not finish the last boss, too difficult
Limbo - some gravity related puzzle near the end was too difficult for me.
