Citites: Skylines can be played with just a mouse. Not ideal, but can be done.

Life is Strange, Armello, Bejewled 3, Poker Night (1 or 2), Punch Club, Sounddodger+, Turbo Pug, Super Mega Neo Pug, Bad Rats to name a few.

XCOM series, fallout classic series, some roguelite and/or roguelikes and most point and click games are the first that come to my mind. Also hiddent object games and tower defense may enter in this category, at least a high number of them
