It's almost funny that whenever I saw "thanks for Skyrim" but also "Thanks for fallout 4", I was completely indifferent to the whole thing, since I never really desired any of those games.... I'm definitely the minority on this as it seems. I consider both so mediocre that they're almost bad, and prefer other less action oriented games in both franchises. I could try bad rats more easily probably. Just for the heck of it.

Not really. Bethesda is pretty infamous for their lack of attention to story, narrative, and characterization, their inclusion of vast empty spaces/underdeveloped areas, their repetitive content, and their often quirky/heavily bugged game systems.
That being said, a lot of people really enjoy the freedom of exploration, the freedom of approach, the ability to discover new hidden away areas, and so forth, that comes with such expansive open world game settings.
Inherently, the games are pretty darn lacking [which isn't surprising, given the lack of involvement Bethesda indicates they put into their games], but individual playstyle preferences definitely make appreciation of them a subjective thing,
Past that, modding is as core to Bethesda games as to Paradox games- often, people end up playing for the mods, rather than the base game. In the case of Skyrim specifically, that's the primary draw for many people, due to it's absurdly expansive modding scene and the breadth of content- serious or joking- that is available.
If you view Skyrim as an open world framework FOR player-developed content, rather than a typical fully-developed RPG, then the game makes a lot more sense, and you really are getting what you paid for.
In terms of freedom to build the game you want, and play the way you want, it's top notch.
Does it cater well to people who like games that are immersive, focused, steadily progressive, and rich in setting & narrative? No.
But thankfully, we've got plenty of other fantasy RPGs available, Wasteland 2 for a traditional take on Fallout, and New Vegas (done by Obsidian, not Bethesda) for a more immersive 3D/action Fallout.
Well, here's hoping Obsidian ends up making a Fallout 4 game as well.. :)
