Chicken with Cider and Bacon Sauce

Ingredients

4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 bacon slices, chopped
1/4 cup minced fresh onion
3/4 cup unsweetened apple cider
1/2 cup fat-free, less-sodium chicken broth

Preparation

Place each chicken breast half between 2 sheets of heavy-duty plastic wrap and pound to 1/2-inch thickness using a meat mallet or rolling pin. Sprinkle chicken evenly with salt and pepper.

Cook the bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan. Ease the chicken pieces into the drippings in the pan and cook about 6 minutes on each side or until done. Remove the chicken from the pan and keep warm.

Add the minced onion to the pan and cook until tender. Next add the cider and broth and bring to a boil. Let cook until broth mixture is reduced to about a 1/2 cup (about 5 minutes). Stir in the cooked bacon.

Serve the sauce over the chicken and eat. Delicious!

Hmm, depends on the cook. I can't cook like, anything, but if I'm like hungry, sometimes I pop myself some.

I just made this for dinner for my family, and all I can say is WOW. It was amazing. Had to use juice instead of cider, since my local supermarket didn't carry it. Also, I may or may not have doubled the bacon... :3
