I used to sort things by genre with three extra categories dedicated to "Gift/Key Drop", "Free Games", and "Bundle".
It's been awhile however so I focus more on recent plays.
It doesn't help that the large bulk of my games fall under RPG, Puzzle, Action, and Port (not a genre but it helps). You'd think it'd be Metroidvania but...
Oh and I have categories for Valve (since I have the pack) and Sam & Max (since all the episodes are listed SEPARATELY for some inane reason).

People organize them?
I just have completed which is where I through games that I either finished or no longer interested in playing.

My tabs are
Demos- for demos I've downloaded
Finished- for games I've finished and most likely wont ever return to
Maybe play- for games I might play if I don't have anything else to play (This tab wont be touched for a LONG time)
Multiplayer- for multiplayer games
Need to keep playing- for games I have started playing but abandoned for some reason
Need to play- for games I definitely want to play
Never play- for bundle/free trash that no sane person would ever want to play

I'm doing much of my sorting through BLAEO now, but I have my Steam library categories divided like this
The numbers are to have them in an order I like, alphabetical wouldn't work as well.
0.1 - Local Multiplayer: Easy access for games I can play with friends using two gamepads and one screen
0.2 - Endless: A few games without an end I can dive in to whenever I feel like it. Cities: Skylines, Civ V to name two.
1 - Current: The games (primarily single player games with a story) I'm currently playing (I often have 3-8 or so on rotation)
1.1 - Current Co-op: Story games I'm playing with someone else. Trine 2 and Borderlands 2 right now.
2 - Next: A few games from other categories I've decided will be the next games I play when I have finished a few of the current ones.
2.1. - Next (SG Short): Short games won from Steamgifts I can move up to the "Next" category (and then "Current") when I feel like playing something short.
2.2 - Next (SG): My other unfinished Steamgifts wins. I know I want to play all these, so I keep them easily accessible.
2.3 - Next (Achievement): Games I started earlier, have gained a few achievements in, and want to finish. Those few achievements per game make them look abandoned, but these are all games I want to play/finish (tried several of them with my previous computer that couldn't run all games properly)
2.4 - Next (Selection): A few other games I've selected from the 3-category, to play when I feel like it.
3.0-3.6 - Later: Games in different categories I'm saving for later.
4 - Done: Games I've finished, and don't feel like playing again for a while
4.1 - Done (Replay): Games I've finished and am looking forward to returning to again soon
5 - Sorted: Original versions of remasters , Beta versions, DLC titles that are launched through the main game and such. Just to clean up.
"Games" - Non installed games (just 5-6 at the moment, I have HDD space to keep everything installed).
"VR" - A forced category from Steam that can't be hidden without hiding the games in it (games that I want in other categories since they can be run non-VR as well). Should burn.

Hmmm. I just keep everything I haven't played or haven't played enough under a "Backlog" category. For ones I've played (finished or just know I won't finish soon or at all), I have about 4 other categories where I place them based on how much I've enjoyed the game, from what I consider horrible to games I love. I feel like good games should have their own place :P.
It also helps in the rare occasion when I want to replay something I liked or something I did not.

I have three groups so far:
HOGs -> hidden object games to play with wife
Completed -> Games with 100% I don't intend to play anymore
Backlog -> Games that I should play when I don't know what to play
It doesn't mean I only play the "backlog" category, they're just there as a reminder to play those first
