Today I completed Ultima VI: The False Prophet. It was almost as amazing as Ultima 7, which is definitely one of the best.

Baldurs Gate's, Fallout 1-2, Neverwinters's, Divinity Original Sin's, Deus Ex's, Vampire: The Masquerade - Bloodlines, Arcanum, Witcher 3, Betrayal at Krondor, Gothic II, Dark Sun's (never finished 2 because of some bug), Jagged Alliance's, Tyranny, Witcher 1-2 too btw :-P My list could be much longer ofc :)

the most underrated rpg on snes, even on this days i haven't see a villain like him.

the others are FFVI, FFIX, Romancing saga 3, twewy, disgaea 1, octopath traveler, kingdom hearts 2 and radiant historia

Looks like my top recommendations have been mentioned already and you've said you've beaten some already but my short list is:

Final Fantasy <most of them, I didn't like FFIX or FFXII and prefer everything before or between>
Might & Magic VIII <Some earlier ones were good as well>
Fable <Fable Anniversary>
Star Wars: Knights of the Old Republic <First is better than the second imo>
Gothic series <despite the horrible controls>

As much as I enjoyed RPG's back in the day, I don't really have time for such long games anymore so my list is rather dated.

I loved the Suikoden series from the PS1 and PS2. The first three games were one the best RPGs I have played.

Sure I could post something about an epic AAA game like Witcher 3 or Divinity OS, but let me tell you about my favorite lesser known RPG: Wizardy VIII instead. It is a 3D turn based RPG where you control a party with up to 8 members that includes scifi elements in a fantasy setting. You control the party in a Hydra perspective (like in other dungeon crawlers e.g. Legend of Grimrock), but are not restricted to grid movement and get to reposition your team within a small radius to shield your casters and avoid getting flanked. The game features 11(+1) races and 15 classes including unusual stuff like psionic or gadgetter, who not only comes with a omnigun that improves as you level up, but can craft all sort of weird gizmos ( Porthole + Pot = Port-O-Potty which can be used to get replicate the effect of the spell Noxious Fumes). While the graphics look very dated (especially for the npcs), the game features excelent voice acting, multiple ways to solve quests and some memorable levels + unique characters.
