I was baking a cake the other night and I wondered to myself how many others out there love baking/cooking. I assume lots but asking and then giving away gas for it seemed more fun.

So my request is if any of you have great recipes, please share! :D Please let them be tried, tested, and true. I will try to make anything that sounds interesting so please don't just copy and paste in something from some blog or recipe site that you don't already love and have tried for ages. Personally, I love 'my Grandmother always made it this way..." recipes. Also, please nothing that is a collection of prepackaged ingredients to be mixed with more prepackaged ingredients... I prefer starting from scratch ironically my posted recipe does have a prepacked ingredient in it.. but anyway..

Don't hate me for not adding potato to the poll! To make up for it will add the recipe for Potato Chocolate Cake! This recipe is about 20yrs old. I've been making it almost that long.

Potato Chocolate Cake

  • 4 oz sweet baking chocolate
  • 1 cup mashed potato flakes
  • 1 cup boiling water
  • 1 1/2 cups all purpose flour
  • 1 1/4 cups sugar
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup butter softened
  • 1/2 cup dairy sour cream
  • 3 eggs
  • 1/2 cup chopped pecans, if desired

Heat oven to 350F.
Grease 10-inch tube pan or 12 cup Bundt pan. Break 4oz chocolate into pieces; place in large bowl. Add potato flakes; pour boiling water over flakes and chocolate. Let stand 5 mins or until potato flakes are softened and chocolate is melted; stir to combine. Add flour and remaining ingredients.
Blend at low speed until moistened; beat 3 mins at medium speed. (Stir in pecans if using... I never do). Pour batter into greased pan.
Bake at 350F for 45-60 mins or until toothpick inserted near center comes out clean. Cool upright in pan 30 mins; invert onto serving plate. Cool completely.
Frost with your favourite icing. I like chocolate Amaretto or just rich chocolate buttercream.

I know how to do both but I'm lazy and avoid it if I can. But when I do feel like doing either I always bake from scratch, and for cooking I can use some canned stuff if I know it's good.

Baking is fun and it is really nice since you get something good afterwards ^^ I mainly use fructose (I tried stevia, wasn't my favorite) since I'm diabetic and wife also likes it even she isn't diabetic :) Fructose adds a bit of challenge though since not everything works like with normal sugar but it is also one of the good things: if you succeed and make something really good for the first time! A bit like added difficulty!

I actually love to cook and bake, but lately I don't take the time to do it much.
My mother felt every man should know how to cook, and she taught me pretty well.
Was actually considering culinary school at one point, but things ended up differently. -_-

I'll have to add a recipe later when I decide which to post. :)

I really like making NY style pizza and bagels from scratch. I also make other stuff like pot roast, beef stew, vegetable soup, salad dressing (italian, made with olive oil), and butter toffee. Mmm, butter toffee is so good. It's pretty easy to make, but it can be a pain to get it to stay mixed when you get it to the right temperature and need to pour it out.

Looks amazing. Honestly I never used to like pizza... just woke up one day a couple years ago and was craving it and loving it ever since. I've never tried bagels but after seeing yours, I want to! I just came across a pizza you cook in a cast-iron skillet in an oven. Want to try that out too.. looks chewy and good.

Thanks. I use to live a little over an hour north of New York city and I grew up eating really good pizza and bagels. I moved away a few years ago and haven't been able to find anything comparable so I started making my own. It takes a lot of work and practice to get it right and they both come out really good. They may not be as good as the real thing, but they are so much better than anything I can buy locally.

A lot of home cooking ends up being so much better than anything purchased in stores and at least you know what ingredients are going into your food. I had what my bf called 'fast food pizza' last Spring in Italy and it was amazing. I've never eaten crusts like that before ... I've been craving it ever since and now your pictures have inspired me to try and make my own. Thanks for the motivation!

For a nice twist on a traditional margherita, mix the herbs in with the flour, then put the cheese directly on the pizza dough, and the sauce on top of the cheese.

Seriously, though, my tastes are so specific that even if I did cook, I wouldn't like anything I eat. Absolutely hate mushrooms, for example. Stir fried vegetables are also disgusting, from what I've tasted.

Maybe your veggies are over-cooked and mushy? or bad seasoning? I adore mushrooms.. but then again, if its a veggie I like I probably adore it.. its really all or nothing with me and veggies.
What do you like? I mean, you say your tastes are specific... what do you specifically like?

Sorry, should've mentioned that I currently live with my parents and lack any cooking skills other than microwaving/toasting stuff. So, in this case, food that I myself don't even cook. I don't have much knowledge on the whole "cooking talk" either, so bare with me. Do note that I have tried before I just... Y'know. Anyways, in terms of vegetables, I hate it when they're either too hard or too mushy and have a steamy taste (does this make sense? Probably not), like when steaming stir-frying broccoli and it has a tangy taste afterwards. I think the biggest issue vegetable I've had before is carrots and mostly because when you steam(I am using the correct wording, right? Steam = hardening of vegetables?) carrots, they tend to harden and get all crunchy...? Then there's the issue when the carrots become mushy, which I think is from too much hydration in the carrots.

I suppose I'm a pasta and seafood guy. I like chicken but it has to be not dry and I tend to only like the meat itself. I HATE fat. I absolutely cannot touch the fat on pork, for example. It's like a pale tasteless jello. I think the best way to explain my pallet is I like strong tastes of specific vegetables, meats, etc. I mean, I've had proper calamari before and... Wow. It almost made me gag because of how jelly-like it is and how awkward it is to chew it. It almost made me gag just from getting close to biting it. I mean, it doesn't taste bad persay but it's so irritating and disgusting to eat.

I'm as confused as you are. My taste is all over the place and it's really hard for me to explain. I still don't understand why I dislike turnip, for example. It just tastes horrible for some reason. I don't know why I can eat beef stir fry but not a "juicy steak". I've tried to get into new food tastes but my tongue just disagrees. I was eating some recently that was either a badly cooked meat or a bad tasting vegetable and I was almost gagging. This is all based around the assumption that my parents cook correctly as they do all of the cooking in the house.

Am I weird for posting here? Have I made it awkward? I feel like I've made it awkward as I, for the most part, don't know what I'm talking about. I've been thinking of trying to cook again because, well, kind of a necessity to be able to make food and I've always considered my self a kind-of foodie. I've always wanted to try new things while also spicing up old things ( I constantly inquire about adding spices and herbs to food "just because").

TL;DR I'm the weirdest person you'll ever talk to and I have no idea what I like or dislike. I just "do".

It does sound like you you dislike the textures more then the food itself. Which, I can't blame you for... if it feels gross to the tongue why would you want to eat it?
Steaming veggies ought to soften them though and cook them. Spices add a ton of flavour to food or really enhance the flavour of it.. so good to add. I'm not so super experienced with cooking, but I just love it so I keep trying! :) Maybe just find a taste you always like and use that as your starting point. You like chicken.. (I never did at all.. then I cooked it with sesame seed oil and my world changed! :D ) so many you need to try to learn to cook that in different ways until you find a way you like?

Mostly because you don't need weigh everything like baking
You'll need to try and taste it before it comes out

Hmm not sure if you want this
I don't really have the recipe too
I just remember the basic ingredients & cake name

Pumpkin cheesecake
Cream cheese
Pumpkin
Sugar
Eggs
Heavy cream
Vanilla extract
Flour (If you want to bake it use this, if not don't use this)

Steps

    1. Whisk the creamcheese and sugar first
    1. Don't forget to oven the pumpkin (To cook it and make the watery pumpkin a bit drier)
    1. Combine with the egg yolk bit by bit
    1. Flour and heavy cream bit by bit, then vanilla extract
    1. Crush the pumpkin then add it to the cake dough
    1. Bake 180°C 30min-40min (or 200°C for 20min)
      Well more or less it's like that

I like fruits, so yeah maybe? Though it's usually strawberries.. Not apples and pears xD

Apples and pears are more pie-thingy for me (If you baked apples & pears it become sweeter than the usual)

Alright, here's my home grown chili recipe. I sortof started with my mom's recipe and kept modifying over the years to get to this. It's a fairly mild fresh chili w/ a rich flavor. This is for a big pot (it'll last for days unless you're taking it for an office party or something), so maybe halve it if this sounds like too much.

  • Hamburger. 1 lb hamburger (80/20 blend)
  • Celery About 1/3 to 1/2 of a bundle of celery (do they call them "heads of celery"? diced up small
  • Onion ... Maybe 1/4 of a good size sweet onion. I don't measure it, but maybe it's 1/3 cup or so of diced onion? I just keep chopping til it looks about right.
  • Mushrooms - 1/2 or so of a small can of mushrooms.
  • 1 or 2 small scoops of bacon grease. Not too much, but it helps w/ richness of flavor.

Brown the hamburger, breaking it up into little bits as it cooks. While it's browning toss in the celery, onion, and mushrooms to stir in so it all gets sauteed together. Put in the bacon grease also.

Once all of that is browned/sauteed up sufficiently then add the following:

  • 2 cans of black bean
  • 1 can of red beans
  • 3 cans of diced tomatoes (I like the ones w/ oregano in them - italian style I think they're called).
  • I add a little bit of ketchup to make the tomato flavor a bit richer (sortof one thin line of ketchup around the surface of the ingredients - start w/ less and add more if desired depending on your taste - but this can be totally skipped also). I've also used tomato paste which works well also, and can be substituted if ketchup isn't your thing. I usually don't have tomato paste handy though, so I end up using ketchup usually.

To this add the spices

  • 2 teaspoons of chili powder.
  • about 1/2 teaspoon of cumen
  • sprinkle in desired amount of crushed red pepper. (more makes it hotter, less just gives a little zing.).
  • sprinkle in a decent amount of oregano.
  • (sorry I don't have precise amounts on the last 2 things, I just kindof sprinkle into the pot until it looks right.)
  • optional: I add in spaghetti to mine (broken into small pieces), but alot of people don't like it, but if you want it in there add it now too.
  • add 2 to 3 pinches of either sugar or splenda (it's good for smoothing out the flavor of the tomatoes. I usually forget this step until I eat the first bowl, but you can compare after mixing it in and it makes quite a bit of difference ).

It'll probably be a little bit thick at this point, so add in enough water to get to desired consistency, and add water as it cooks if too much evaporates.

Cover and bring it to a boil on medium heat, and then cook on lower heat, maybe medium low, for about an hour to hour and 1/2. It should keep bubbling as it cooks even on lower heat. Check and stir it every 10-15 minutes or so.

Anyhow, that's pretty much it. Scoop into bowl, add cheese and crackers as desired!

Thanks! It's a beautiful (albeit cold) time of year to be in the woods. I'm sure they will appreciate the chili afterwards. Hoping the temperature goes up... we're currently sitting in a -25C cold snap. Blah. I had to look where you were from.. I lol'ed, not surprised you don't know snowshoes!
