In no particular order: Arcanum, Planescape: Torment, Fallout 1&2, Baldur's Gate 1&2, Ultima 4-7 (didn't age that well, though), Wizardry 7, Neverwinter Nights 2, Betrayal at Krondor.

Most of this has to do with what I played first. When I was a child, I was easily impressed and the games I first played had the greatest impression on me. I played FF8 and Legend of Dragoon before any of those other games. That's probably why I rank them so high.

Legend of Heroes: Trails in the Sky and it's two sequels that aren't localized yet. Not many RPGs get my love to the point that I would import just to know what happens next rather than waiting for the localization.

No one mentioned Harvest Moon: Back to Nature on PSX days? Man that game was a bomb! And still my favorite RPG ever...

Of the PC RPGs it has to be Nox, my first. For consoles, I would say Chrono Trigger then Final Fantasy 4 then 8.

If you're looking for more modern RPGs, I would say Dark Souls, hands down. It is punishingly hard, and that's what I like in a lot of games.
