I was baking a cake the other night and I wondered to myself how many others out there love baking/cooking. I assume lots but asking and then giving away gas for it seemed more fun.

So my request is if any of you have great recipes, please share! :D Please let them be tried, tested, and true. I will try to make anything that sounds interesting so please don't just copy and paste in something from some blog or recipe site that you don't already love and have tried for ages. Personally, I love 'my Grandmother always made it this way..." recipes. Also, please nothing that is a collection of prepackaged ingredients to be mixed with more prepackaged ingredients... I prefer starting from scratch ironically my posted recipe does have a prepacked ingredient in it.. but anyway..

Don't hate me for not adding potato to the poll! To make up for it will add the recipe for Potato Chocolate Cake! This recipe is about 20yrs old. I've been making it almost that long.

Potato Chocolate Cake

  • 4 oz sweet baking chocolate
  • 1 cup mashed potato flakes
  • 1 cup boiling water
  • 1 1/2 cups all purpose flour
  • 1 1/4 cups sugar
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup butter softened
  • 1/2 cup dairy sour cream
  • 3 eggs
  • 1/2 cup chopped pecans, if desired

Heat oven to 350F.
Grease 10-inch tube pan or 12 cup Bundt pan. Break 4oz chocolate into pieces; place in large bowl. Add potato flakes; pour boiling water over flakes and chocolate. Let stand 5 mins or until potato flakes are softened and chocolate is melted; stir to combine. Add flour and remaining ingredients.
Blend at low speed until moistened; beat 3 mins at medium speed. (Stir in pecans if using... I never do). Pour batter into greased pan.
Bake at 350F for 45-60 mins or until toothpick inserted near center comes out clean. Cool upright in pan 30 mins; invert onto serving plate. Cool completely.
Frost with your favourite icing. I like chocolate Amaretto or just rich chocolate buttercream.

I would post a picture of the cake (I hate making things I haven't seen) but atm don't have the pictures uploaded to a site I can link from, sorry. I might try to upload or I might not bother... haven't decided yet.

PICTURES!

Bundt pan, cooling
With yummy dark chocolate buttercream icing
Just in round cake pans with amaretto chocolate icing

From responses I will be adding to my WL. It's random and my reasoning for it follows little logic... most probably it will be because I like something you say and you're at least level 3+

Everything I eat comes from a box and/or package and/or take-out
I don't do the cooking in my house

I generally live off boxes/takeout/leftovers-from-family/.. stuff or I cook complicated dishes like spaghetti with ketchup (and spices or some kind of sausage etc if I feel fancy) :P

I could offer some super easy cookies:

  • 125 g butter

  • 125 g (brown) sugar

  • 75 ml maple syrup

  • 1 egg

  • 250 g flour

  • 1/2 tsp baking power

  • 1 bag vanilla sugar

  • 75 g chocolate, chopped

16-20 cookies -> 180°C, 15-20 Min

just mix it all together (recipe recommends the first three first, then the next four, then the chocolate)... And I know from experience that you can easily increase the amount of chocolate, I think I personally went with, like 200 g last time :)

I suck at baking, but I do love cooking! :> I used to take pictures (well my fiancee used to) of some of my dishes. but since she broke her camera we don't do so anymore, so the album was not updated in some time, but anyway here are some photos

I love baking slightly more than I love cooking, because I have a major sweet tooth. Plus working in the kitchen is like working in a chemistry lab, except slightly safer and you can eat the results of your experiments without dying usually.

a variety of recipies I adore. Okay, that last one TECHNICALLY doesn't involve baking, but its eggless edible cookie dough, its a recipie everyone should know.

Not even close... I just think food's fun :)
It's pretty fun to watch people enjoy what I created and there's something really satisfying about providing nourishment for others.

I do enjoy both cooking and baking so i won´t choose between them.

And here´s one of the Cake reciepes i recently tried out (wanted to give you a carrot cake reciepe but you already got one that looks interesting enough)

Cheesecake with rasberry and blueberry

200g sugar
20 g vanilla sugar
125g corn/ potaoe starch

mix those in a big bowl

then put

1 kg quark (low fat)
300g cream cheese
6 eggs (whole)
2 eggyolk (only the yellow)
1 teaspoon of lemon peel
1 pinch of salt

mix it until it´s homogeneous.

Take a big baking tray, put a baking paper sheet on.

spread the quark mass on it and throw washed (and dried - thats important, cause too much water ruins your cake) rasberrys and blueberrys on it.

i use ca 150g of each and wash it 3-4 hr. before it so they dry.

Crumble:

75g of wheatflour (type 405 - thats really fine ground)
2 tablespoons of honey
50 g soft butter (just take it out 1 hr before baking)
175g of muesli ( i use some rasberry white chocolate one) use a woodenhammer to break it into small crumbs.

mix those ingredients and throw over the cake.

bake it for 40 - 45 min by 160° C circulating air or 180°C over and under heat on the second lowest place.

i had a similar topic not to long ago and am still triing some of the reciepes i got there, so expect a long time if you want to try everything you will get ^^
