I was baking a cake the other night and I wondered to myself how many others out there love baking/cooking. I assume lots but asking and then giving away gas for it seemed more fun.

So my request is if any of you have great recipes, please share! :D Please let them be tried, tested, and true. I will try to make anything that sounds interesting so please don't just copy and paste in something from some blog or recipe site that you don't already love and have tried for ages. Personally, I love 'my Grandmother always made it this way..." recipes. Also, please nothing that is a collection of prepackaged ingredients to be mixed with more prepackaged ingredients... I prefer starting from scratch ironically my posted recipe does have a prepacked ingredient in it.. but anyway..

Don't hate me for not adding potato to the poll! To make up for it will add the recipe for Potato Chocolate Cake! This recipe is about 20yrs old. I've been making it almost that long.

Potato Chocolate Cake

  • 4 oz sweet baking chocolate
  • 1 cup mashed potato flakes
  • 1 cup boiling water
  • 1 1/2 cups all purpose flour
  • 1 1/4 cups sugar
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup butter softened
  • 1/2 cup dairy sour cream
  • 3 eggs
  • 1/2 cup chopped pecans, if desired

Heat oven to 350F.
Grease 10-inch tube pan or 12 cup Bundt pan. Break 4oz chocolate into pieces; place in large bowl. Add potato flakes; pour boiling water over flakes and chocolate. Let stand 5 mins or until potato flakes are softened and chocolate is melted; stir to combine. Add flour and remaining ingredients.
Blend at low speed until moistened; beat 3 mins at medium speed. (Stir in pecans if using... I never do). Pour batter into greased pan.
Bake at 350F for 45-60 mins or until toothpick inserted near center comes out clean. Cool upright in pan 30 mins; invert onto serving plate. Cool completely.
Frost with your favourite icing. I like chocolate Amaretto or just rich chocolate buttercream.

Remove the core of an apple, place on a baking sheet.
Stuff with a mixture of assorted nuts, sugar, cinnamon, and maybe cranberries or raisins
Bake until cooked (about half an hour at 350 degrees)

Here's the first recipe I ever created entirely by myself, back when I was a kid
Fabulous dessert:

Cut pear into small cubes
Melt dark chocolate in a pan
Stew the pears in the melted chocolate, until very soft (depending on the pear, this could take hours)
Add vanilla to taste

  • may need to add a thickening agent, if it's too liquidy
    Cut a sour apple (granny smith) into slices

Place the apple slices on a plate, and cover with the stewed pear and chocolate

(if I happen to have coconut around, I put some coconut in there as well)

yup. they're not too tricky once you've done them a few times, and it definitely makes for a good sauce. Then a combo of cheeses that avoid being too stringy or too oily. just yum.:D

ya can spend years arguing over which cheeses to use, but you hit the nail on the head: not too stringy and not too oily. And of course you can choose to be a purist, or you can add tuna or lobster into the mix.

my mom used to mix in peas or tuna, too. I've found that cauliflower is a good addition to this one, plus it tends to blend in color/texture/flavor-wise.

I work in a restaurant, so... yea, maybe?

I don't particularly like baking that much, because I don't like eating baked goods. And have no one to bake for. :D My favourite cooking thing is probably Cheater's Panna Cotta because it's so damn easy while being so damn delicious!

It's just 250 ml milk, 250 ml Greek yoghurt (or some other type natural if you prefer), 10 grams of gelatine (can be substituted with agar agar etc.), 60 grams of sugar (adjust per taste) and spices (per preference, I love basil). Heat up, infuse the spices for 30 mins, heat up again, melt the gelatine, strain (if necessary), pour in molds, place in the fridge and let set.

I like a nice berry coulis on the side, but persimmon is nice too. And crumbles are kewl. :B Caramel is too sweet for me.

Well, this has given me a few new recipes to try out, thank you.
As payment I shall give unto thee one of my mom's recipes.

Rhubarb Pie
3 1/2 tbsp Tapioca (not sure it's hard trying to read her handwriting)
3 tbsp Flour
1 Cup Sugar
1 Egg Beaten
2 Cup Rhubarb (cut into small pieces)
1 Pie Shell (top and bottom)

Sift Tapioca, flour + sugar together.
Add egg. Beat thoroughly.
Add Rhubarb.
Pour into the Shell.
Bake at 425 for 10 minutes
Reduce heat to 350 and bake for 35 more minutes

I'll be honest I've never made or tried this... my dad has and he said it's one of the best things my mom ever made.

Eh, I wasn't going to make another post but here I am.
I sorta wanna know, are you looking for any particular kind of recipe or at the very least can you tell me what your favorite type of food is so I can scavenge through all my cook books trying to find one you might not have.
And of course a second-ish recipe
Use the same Rhubarb Recipe BUT change the amount of Rhubarb to 1 1/4 cups and add 1 Cup of Strawberries
Now you have Strawberry-Rhubarb Pie.

No, I'm fairly open to trying most things. I don't really dislike anything... though, I'm not saying I prefer to eat ostrich on a weekly basis or something. I come from a meat & potatoes community, so was just looking for whatever else people love cooking or baking as a treat or on a daily basis. I don't mind either. Just something you, yourself, loves. Instead you get....

Raspberry Oatmeal Bars

1 Package Yellow Cake Mix
2 1/2 cups quick-cooking oats
3/4 cups (1 1/2 Sticks) butter (melted)
1 cup (12ounce jar) raspberry preserves or jam
1 tablespoon water

  1. Preheat Oven to 375f. Grease 13x9x2 inch Pan.
  2. Combine dry cake mix and oats in large bowl; add melted butter and stir until crumbly. Measure half of crumb mixture (around 3 cups) into pan. Press firmly to cover bottom. Combine preserves and water; stir until blended. Spread over crumb mixture in pan. Sprinkle remaining crumb mixture over preserves; pat firmly to make top even.
  3. Bake at 375 for 18 - 23 minutes or until top is very light brown. Cool in pan or on rack; cut into bars. Store in airtight container.

You can change the preserves to just about anything if you want.

Meant to post much earlier but I started to play Borderlands.
Shelf life, hmm, can't really say most of what I bake doesn't live past the third day.

First we have a nice drink

Hot Mulled Pineapple Juice

5 1/2 cups of Pineapple Juice
1 Apple (cored and cubed)
1/2 cup of Raisins
1/2 cup Brown Sugar (packed)
2 cinnamon sticks (broken up)
1 tablespoon grated orange peel
1/2 teaspoon whole cloves
Quartered orange slices for garnish

In saucepan, combine all ingredients; simmer for 15 minutes. Strain before serving. Garnish with the orange slices.

Next up is some soup

Chicken and Rice soup (the only way I can use rice)
10 cups Chicken Broth
1 medium onion (chopped)
1 cup celery (sliced)
1 cup carrots (sliced)
1/4 cup snipped parsley
1/2 teaspoon cracked black pepper
1/2 teaspoon dried thyme leaves
1 bay leaf
1 1/2 cups chicken cubes (3/4 pounds)
2 cups cooked rice
2 tablespoons fresh lime juice
Lime slice for garnish

Combine broth, onion, celery, carrots, parsley, pepper, thyme and bay leaf in dutch oven.
Bring to a boil; stir a couple of times. Reduce heat; simmer, uncovered 10 - 15 minutes. Add chicken; simmer again for 5 - 10 minutes or until chicken is cooked. Remove and discard bay leaf. Stir in rice and lime juice just before serving.
Garnish with lime slices.

Next we have some great main dishes

Beef Goulash (this is a very good dish)
1/4 cup vegetable oil (divided)
2 pounds boneless rump or chuck, cut into cubes
3 medium onions (sliced)
2 cloves of garlic (minced)
1 can (16 ounces) tomatoes, undrianed, cut into pieces
4 teaspoons paprika
2 beef bouillon cubes
1 teaspoon dried marjoram leaves
1 teaspoon thyme leaves
1/4 teaspoon pepper sauce
1 bay leaf

In large heavy sauce pot or dutch oven heat 2 tablespoons oil; brown meat in 2 batches. Remove; reserve. In same pot heat remaining 2 tablespoons of oil; cook onions and garlic 5 minutes or until lightly browned. Stir in tomatoes, paprika, bouillon cubes, marjoram, thyme, pepper sauce and bay leaf. Return meat to pot. Cover; simmer 1 1/2 - 2 hours or until meat is tender; stir occasionally.
Remove Bay leaf.
Serve over noodles or whatever you enjoy.

Chicken l'Orange

4 skinless boneless chicken breast halves
2 tablespoons butter
Salt and Pepper
2 teaspoons cornstarch
2/3 cup orange juice
1/3 cup heinz 57 sauce
1/4 cup orange marmalade
Toasted slivered almonds (I don't use them)

Lightly flatten chicken breasts. In large skillet, saute chicken in butter until cooked, about 8 - 10 minutes; season with salt and pepper. Remove chicken; set aside. In small bowl, dissolve cornstarch in orange juice; stir in 57 sauce and marmalade. Pour into skillet. Heat, stirring constantly, until mixture is hot and thickened. Return chicken to skillet; heat through. Spoon sauce over chicken; garnish with almonds.
To toast the almonds, spread almonds in shallow baking pan; bake in preheated 350f oven, 8-10 minutes or until lightly browned.

Smoked Sausage Noodle Bake

1 pound Smoked Sausage
8 ounces of uncooked medium egg noodles
2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped celery
1 can (17 ounces) cream-style corn
1/2 cup sour cream
1/2 teaspoon salt
dash of ground black pepper

Preheat oven to 350. Cook noodles according to package directions. Melt butter in small saucepan over medium- high heat. Saute onion and celery until crisp-tender. Combine noodles, onion, celery, corn, sour cream, salt and pepper in large bowl. Pour into buttered shallow 2-quart baking dish. Cut sausage into serving size pieces. Arrange on top of noodles and push down partially into noodles.
Bake for 40 minutes or until hot.

Sweet Garlic with Chicken Pasta
8 ounces garlic (minced)
5 1/2 tablespoons olive oil
1 1/2 pounds Shiitake mushrooms (sliced)
2 cups fresh plum tomatoes (diced)
1 cup chopped green onions
1 teaspoon crushed red pepper
2 cups chicken broth
1 1/2 pounds chicken breasts (grilled, skinned, boned, and diced)
1 package (16 ounces) bow tie noodles (cooked, rinsed and drained)
4 ounces cilantro (chopped and divided)

Cook and stir garlic in hot oil in large skillet over medium to high heat until lightly browned. Add mushrooms, tomatoes, green onions and crushed red pepper. Cook and stir 2 minutes more. Add broth; simmer mixture to reduce slightly. Add chicken, noodles and 1/2 of the cilantro; heat through. Garnish with remaining cilantro.

Finally to the sweets.

Chocolate Cherry Cordial Muffins

2 cups all purpose flour
1/4 cup granulated sugar
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
One 11 1/2-oz package (2 cups) Chocolate morsels (divided)
1/2 cup candied cherries (chopped) or raisins
3/4 cup milk
1/3 cup vegetable oil
1 egg

Preheat oven to 375. Grease twelve muffin cups or line with cupcake liners. In Large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda and salt. Stir in 1 3/4 cups of milk chocolate morsels and cherries; set aside.
In small bowl, combine milk, oil and egg. Stir into flour mixture just until moistened. Spoon into prepared muffin cups (muffin cups will be full). Sprinkle with remaining 1/4 cup milk chocolate morsels.
Bake 18-21 minutes or until golden. Cool 5 minutes; remove from pan.

Chocolate Cookie Sandwiches ( filling included)

1/2 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/3 cup Cocoa
1/2 teaspoon baking soda
1/4 cup milk

Heat Oven to 350. In large mixer bowl, beat shortening, sugar, egg and vanilla until light and fluffy. Stir together flour, cocoa, baking soda and salt; add alternately with milk to shortening mixture, beating until mixture is well blended. Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake 10 minutes or just until cookies are soft-set (DO NOT OVERBAKE). Cool slightly; remove from cookie sheet to wire rack. Cool completely. Spread bottom of one cookie with about 1 tablespoon Creme filling; cover with another cookie.
Repeat with the rest of them.

The Filling (oh ya)
2 tablespoons butter (soft)
2 tablespoons shortening
1/2 cup of marshmallow creme
2/3 cup of powdered sugar
3/4 teaspoon vanilla extract

In small mixer bowl, beat butter and shortening until blended. Gradually beat in marshmallow creme. Add powdered sugar and vanilla; beat to spreading consistency.

Caramel-Apple Sundae Cheesecake

Crust
1/3 cup margarine
1/3 cup sugar
1 egg
1 1/4 cups flour
Filling
2 packages (8ounces) of Cream Cheese (softened)
2/3 cup sugar (divided)
2 tablespoons flour
3 eggs
1/2 cup sour cream
1 Cup chopped peeled apple
3/4 teaspoon ground cinnamon
1/2 cup of Caramel Topping (divided)
1/4 cup chopped pecans

Crust: Heat oven to 450
Beat Margarine and sugar at medium speed until light and fluffy. Blend in egg. Add flour; mix well. Spread dough onto bottom and sides of 9- inch springform pan. Bake 10 minutes

Filling: Reduce oven to 350
Beat creme cheese, 1/3 cup of sugar and flour at medium speed until well blended. Add eggs, 1 at a time, mixing well after each addition. Blend in sour cream.
Toss apples in remaining sugar and cinnamon. Stir into cream cheese mixture. Pour over crust. Swirl 1/4 cup caramel topping into cream cheese mixture.
Bake 1 hour. loosen cake from rim of pan; cool before removing rim of pan.
Refrigerate.
Top with remaining caramel topping and pecans.

Also I'm sorry for not having any pictures I don't take pictures of the food I make... just don't really see the point to it.
But either way I hope you get some use out of one of those recipes.

Food's more interesting... and there are so many people from different places, it's really great to get the variety in recipes. I grew up in a 'meat and potatoes' place, so its fun to get recipes I have to google the ingredients to find out what they are. Looking forward to trying everything here :)

I use a heavily modified local recipe of Creole Jambalaya. Not sure if I got the measurements or the translation right, though. It's too bad that there's no international standard measurements for cooking.

3 dl (1.25 cups) long-grain rice
5 dl (2.1 cups) water
300 g (10 oz) shrimps
400 g (14 oz) smoked ham
1 bell pepper
1 tsp crushed tomato
1 large onion
2-3 cloves of garlic
bundle of parsley
3 ml (3 cc) thyme
3 ml (3 cc) celery salt
3 ml (3 cc) cayenne pepper
1 dl (0.4 cups) vegetable oil

  1. Chop the onion, garlic, and parsley.
  2. Cube the bell pepper and ham.
  3. Heat the vegetable oil in a stock pot.
  4. Add the rice and chopped onions, cook for 3 minutes.
  5. Stir in the crushed tomato, ham, and water.
  6. Add the garlic, thyme, celery salt, cayenne pepper, and half of parsley.
  7. Stir and bring to boil.
  8. Cover and let it simmer for 25-30 minutes.
  9. Add the shrimps and bell pepper.
  10. Let it simmer for 5 more minutes.
  11. Serve sprinkled with the other half of parsley.

I like both but prefer cooking for its healthiness :D
So here some realy basic recipes.

First off the pasta dough recipe :

  • 1 Serving (1 Person)
  • 1 Egg
  • 100g Flour

Thats it. Best to prepare with a pasta machine. You can use this dough for all pasta recipes including lasagna.
It realy fills you up because of the egg (a lot of pasta you can buy is without eggs).

Here is a basic recipe for pizza dough.

Preheat the oven to the maximum temperature and leave the griddle inside.

  • 3 Servings (3 Pizzas)
  • 500g flour
  • 21g or half cube of fresh yeast
  • 200ml warm Milk
  • 20ml (Pils- ) Beer
  • 2 Tablespoons Salt

Put the flour on the table and make a hollow in the middle.
Take the yeast and crumble it in there. Fill it with milk and other ingredients.
Mix it untill the texture is smooth (Might need to add a little bit more milk).
If you achieved the desired texture roll the dough to a ball and put it in a big bowl and cover it with a towel.
Let it rest in a warm room for atleast 45 min.

Now cut the dough into three equal pieces and spread some flour on the table and roling pin.

Flatten it out and spread it with (Homemade) sauce. Leave a small outskirt.

And now: Add all your favourite toppings.

Put it in the oven and bake it.

Eat and enjoy :)

Not very good at cooking myself but I've been making the beef soup for pho. Which is basically boiled cow bones mixed with pan fried onions, ginger, cinnamon, and any other spices I feel like adding. Takes a long time for the soup to cook (5+ hours). But I do notice that it tastes better if I consume it the day after.

Traditionally you are supposed to have rice noodles with this soup but I find it tastes ok with pasta as well.

I like to get creative in the kitchen when I can, the other day I made Coconut Oatmeal Raisin cookies. They turned out rather good. Considering I wasn't using a recipe at all and just winging it I am actually quite surprised. Had the texture of muffin tops.
