I, too, didn't finish a lot of the games I started. Some of them weren't what I expected so I just stopped. Now I'm pushing myself to finish games I start - there are so many awesome games! I'm going to start Witcher 3 and I will finish that!
With books, I generally finish them. Unless the plot or writing style is just so bad that I can't take it.
And then comes the dilemma - read or game?

When I get a book I've been waiting for, it's a read through in one to two sitting. Which could mean reading until 3am or in some cases not sleeping! I can't stop when the plot is engrossing!
Gaming is like that too - "I'll just do one more quest!" or "I'll just get to the next portal" or "I'm just going to set up this section of the prison" and then before I know it, it's already daylight...
Hmm maybe this is a sign that I lack control...

Congrats on finishing a game! But now I'm feeling the pressure of finishing the game I just won from you (・・;)
I don't even know how one is supposed to finish a fighting game, other than Arcade and Story modes. And I'm not big on achievements.
An exception is Reus, though. That game pretty much requires you to complete achievements to get new variations of resources as rewards. And I enjoy the game enough to just do that.

Know the feeling... I usually enjoy a game a lot but as soon as I get another good-looking one I just ditch it to try the newer one... it is a vicious cycle... However, I am making an effort too to complete one of my favorite games: FF IX... However, Stardew Valley came up in the HB Monthly and it has seduced me a couple times :P
Let's see how it all ends up...

careful, i heard being on fire hurts ;)
i have something similar. it's just that the games gets reptitive at some point. there are games i finished (reached the end, never 100%).
but book? last month i read a book that was boring from the middle (a 1000 page book). i finished it anyway, in games i would never do that.

Congratulations! I finished Oxenfree myself a few days ago and gotta say - I love everything about it! Art, voice acting, dialogue, story, music, characters! It also benefits from the second playthrough - you get additional dialogues and an opportunity for even happier ending. There was also cool ARG game around it where people were hunting for secret messages and hints, at the end of which a small group traveled on a location and after some more solving they found a music box, cassette tapes, diary pages and other cool stuff. There is a documentary about it, if you are interested. It's very well done and made me wish I were there.
About your problem - I have kinda opposite, I sometimes can't stop until I finish a game or TV show. Like binge watching 10 episodes a day or playing something all night long, which is not very healthy or productive. Not always of course, usually I have some self control, but from time to time something consumes me so much I can't get my mind off it.
Well, you can always start with something shorter, just to train your attention and focus. For games I could recommend (going strictly from your owned list. Also I don't know your taste in genres, so I'll try to vary):
Brothers - A Tale of Two Sons - very short, but amazingly good and beautiful and emotional.
Call of Juarez Gunslinger - for fun and shooting. Great humor, easy gameplay.
Transistor - just an amazing game! I mean - it has everything! Heavenly good music, emotional story, beautiful art, and godly amazing voice narration that accompanies you. Speaking of all of it, there is also Bastion from the same devs and the same level of awesomeness, but is sadly missing from your collection. But I still had to recommend it, it is too good to miss.
Psychonauts - okay, okay, this one is not that short. But I just couldn't make a recommendation list without mentioning it.
And now for TV shows:
Utopia - great, but sadly very underrated title. Just six episodes of intensity and dynamics. Music, visuals, story - everything on a top level.
Alice - not sure if it could classify even as mini-series - just two episodes (so you could definitely concur this one), but it's great. Sci-fy with new look on the old tale with nice story and IMHO the best Alice and Hatter team.
Over the Garden Wall - charming, melancholic and sweet animation. Ten very short (about ten minutes) episodes.

I always try to finish every game I start unless the game is awful. I am currently sitting at 60 100% games on Steam + some others that either dont have achievements or are not on Stream. My biggest problem is that I need to switch games a lot otherwise I get bored and the result of that it is that I currently have 114 games installed on Steam alone. I might have a problem.
Also I might be stupid because I cant for the life of me figure out the answer to the 3rd question D: Thank you anyways! :)

Yesterday was a historic evening for me. I completed the game Oxenfree, which was the first game I've actually played to the end since Skyrim on the Ps3, like 5 years ago.
I've always had the habit of playing games and stopping midway to try another game... Tomb Raider, Witcher 2, Victor Vran, Pokemon X... are all games I've enjoyed but randomly ditched. Even Tales of Symphonia, one of my very favorite RPGs, I stopped right before the final boss (;.
And when I think about it, it's not only games that I don't complete. Hobbies such as singing, playing the piano, the guitar, nail art ( I mean nail polish not hammering nails to a canvas:^) ), are all skills I've picked up partly and then moved on from. What's my problem? D:
This also includes TV shows I really enjoyed, such as Gotham, Revolution, and House MD, that I randomly stopped for no reason. I'm mostly okay with books - those I usually finish, thank God (;.
Anyway, last week, I was thinking about it, and I decided to push myself to finish games that I enjoy! Perhaps start collecting achievements and perfect games sometimes too. Yesterday, I was going to try some random game, but I lit up a candle, made some tea, and forced myself to finish Oxenfree. It was awesome! The game is great ,and witnessing the ending of a game is an amazing thing!
So yeah. Watch me, because I'm on FIRE now!
Oh, and I may have a couple of games for you guys:)
