Steins;Gate had a bit of all. Great plot twists and characters with well-thought-out backgrounds, humour and basically mindfuck factor. I consider it one of the best I've ever seen.
Fate series for it's whole awesomeness and animation in battle scenes.
Hellsing Ultimate for state of the art animation and dark fantasy setting mixed with science, ocultism and religion.
Gintama for being the best parody anime with solid characters and some serious arcs that could be a great shounen anime itself.
Clannad for being the most emotionally tearing anime (the further it progress, the harder it is not to shed a tear).
One Punch Man = E-P-I-C. The badassness of this anime can flood your room from the monitor/tv :P
ReZero for it's uniqueness, but I don't want to spoil anything, it's for the best to watch some episodes and that may make you hooked.

There are many more that have their own merits, but it would take too long to list them all. It mainly depends on what you're looking for in anime. Of course, there are some classics like Cowboy Bebop, Trigun, Slayers, Death Note, GitS and so on, but it seems silly to list them.

Texhnolyze - An dystopian city with different organizations vying for power. Really depressing, but it did stick with me.
Monster - A neurosurgeon gets involved with a psychopath that was a former patient. Powerful characters.

I like more "carefree" series like Inukami, Gintama or School Rumble and I like to watch harem ecchi series because they provide fun and unlikely circumstances with "plot" and sometimes, actually a decent plot. I don't like mindless "love" series and/or love triangles that don't go anywhere or resolve or advance somehow. That's why I keep scores on everything I watched. They're relative though, as in FMA's 9 is in no way shape or form the same as Maria+Holic's 9. Keep that in mind and happy watching. (:

I have a weird bias against anime, probably due to the community, but even through that bias I'd suggest checking out One Punch Man and Mob Psycho 100. They got me to open up to anime again so they're probably great?

Tengen Toppa Gurren Lagann. It had such humble beginnings yet it became so huge. I know "epic" is an overused term (and often not even used correctly), but it's an appropriate word to describe Gurren Lagann. It's not overly technical or intricate, but it's bold and full of energy. It's very easy to get into, and you'll be glad you did.

I don't watch much anime - I'm way more of a manga reader so I'm not sure if my list would be valid here since I wouldn't know how the anime of the mangas I read turn out to be. :( I do expect the Boku no Hero Academia anime to get much much better though since I've watched the first season for it and oh let me tell you that there's going to be way more development from that point on.
